in large quantities in the
Hawaiian Islands and ia (rain

American bill of fare. It ia at
tracting the attention of food
specialists, scientists and doctors.

partment where the food value of
any product la tested, and whw
the most careful experimental
work is carried on with any food

Such experiments have been
performed on Hawaiian pineap
ple, and the following interesting
figures have resulted:
Moisture, sugara, protein, crudn
fiber, mineral matter, and fruit
acids in the order named are found
in canned pineapple. Naturallv
the largest percentage of this juicy
fruit is tl.e moisture.
Since the vitamin content of any
food is regarded of great import
ance in arriving at, a judgment of
its dietary .value, various experi
ments on rata and guinea pig
are performed to determine th;
point.
These experiments have proved
beyond question that the pineap

canned pineapple and the fresh,
just after It has been picked at tho
right stage of ripeness.

A SALAD is the ideal luncheon
for those warm spring days
when 'we feel too enervated
for a hearty meal, or even for a
hot dish. It should be a light
salad crisp, cool and snappy,' yet
nourishing. Ready-to-serve vegeT
tables, fruits, fish -nd poultry are
excellent for the purpose, because
they require little work and it takes
but a few moments to arrange them.
Beet and egg- salad pleases both
the eye and the palate.' Dice canned
beets and mix them with quartered
hard-boiled " eggs on lettuce, with
mayonnaise for dressing. Sliced
pineapple and cheese-balls, make a
salad as picturesque as it. is deli
cious. Grate or cut up lb. Amer
ican cheese and cream with 1 table
spoon mayonnaise. ' Roll into balls
and place one in center of each
. slice of canned pineapple. Sprinkle
with paprika and serve on lettuce
with mayonnaise. The cheese that,
comes in tins, will be found con
venient, because it keeps moist that

An excellent spring salad consists
of 1 cup canned sauerkraut, chop
ped; K chopped red apple with skm
left on; Vt cup chopped celery.;
Serve with mayonnaise on lettuce.
And here is .a tasty pea salad:
Mix. No. 2 size can small peas with
2 tablespoons chopped onion, 4 .
tablespoons. , cream cheese and 4
tablespoons chopped sweet pickles.
Serve on lettuce with salad-dressing.
Another .savory , spring - salad is"
made thus: Drain and chop con-,
tents of No. 3 can of spinach., Mrc,
with - mayonnaise" and form into
mounds, topping each , with slice of
