To keep milk clean and fresh, it should be strained through at least three thicknesses of fine cheese cloth immediately after niilkinjc, Kimrey -said- It should then be poured in standard-size quart milk bottles and .sealed with standard bottle caps. Then the bottle should be placed in tho "coldest, water available and allowed to cool. The water should be changed as often as necessary to bring the milk rapidly to the tem perature of the water. On farms wher ice is kept, the milk should be placed in the ice box after it has been cooled by water. Where ice is not kept the milk should be left in cold Water until it is to be used. J he cream can be poured from the txiitles and kept for churning or other .purposes. The rapid cooling of milk in bottles will cause the cream to rise more quicklv and completely than is the case when milk is not I'i'oied and where it is stored in large Vessels, such as buckets or cans. Milk thus handled is completely aled from dust, odors, or other mis of contamination.
