Say It With a V alentine Cake j j PINK-FROSTED chocolate Valentine cake made with dry milk solids. By CECILY VALENTINE Associated Press Food- Editor A VALENTINE for your family? Then bake this cake. It has two layers of nut-filled chocolate and it is somewhat like brownies in texture and flavor. Fill and cover the cake with pink peppermint frosting and arrange a pretty heart of 'tiny pink candies over the top. We used nonfat dry milk in the cake, sifting it in with the dry ingredients. Nothing new about that ?we've often suggested this meth od. But we did try something a lit tle different in making the frost ing: we used the dry milk solids in it. too. If you are serving a Valentine meal to your family, you might Start off with Tomato Bouillon. Make the soup with tomato juice, chicken bouillon cubes and such seasonings as minced onion and celery, Worcestershire sauce and basil. Cut heart shapes out of toast, spread them with butter and run them under the broiler a minute or so: float the toast heart on the soup just before serving. The main (course for your Val entine lunch or supper might be slices of cooked chicken or smoked turkey arranged over stalks of cooked broccoli. Cover them both with a rich cream sauce, sprinkle the -top with lots of grated Par mesan cheese and place in the even until bubbly hot. If the top doesn't brown enough fpr your taste, run the casserole under the broiler. Salad? How about romaine and pink grapefruit? For dessert, this Sweetheart Fudge Nut Cake. If the cake is to be served for an evening supper, you might pref ace it with chicken salad garnish ed with hearts cut out of canned jellied cranberry sauce. Or if you prefer to serve sandwiches instead of a salad, cut the bread in heart shapes and use a filling of deviled ham or one of ground bologna mix ed with finely diced celery, pickle relish, prepared Bahama-type mus tard and mayonnaise. SWEETHEART FUDGE NUT CAKE Ingredients: 1V? cups sifted flour. 1 1/3 cups sugar. V6 cup instant nonfat dry milk powder, ^4 tea spoon baking powder, Vi teaspoon baking soda. Vi teaspoon salt, cup boiling water. 3 squares (3 ounees) unsweetened chocolate (cut in Small pieces), 6 tablespoons softened butter, 34 teaspoon van illa, 2 eggs. 34 cup coarsely chop ped walnut meats. Pink Peppermint Frosting. Method: Grease bottom of two round layer-cake pans leach 8 in ches across and 1 inch deep); line bottoms with waxed paper; grease paper. Sift together flour, sugar, instant nonfat dry milk powder, baking powder, baking soda, and salt. Pour boiling water into mix ing bowl; add chocolate and butter; stir until melted. Add sifted dry ingredients, vanilla and eggs. Beat three minutes on electric mixer at medium speed or 450 strokes by hand. Fold in walnut meats. Turn into prepared pans. Bake in' mod erate <350 degrees) oven until cake tester inserted in center comes out clean and top springs back when lightly touched with finger?about 35 minutes. When cold spread Pink Peppermint Frosting between layers and over entire outside of cake. PINK PEPPERMINT FROSTING Ingredients; 2:,4 cups sifted con fectioners' sugar. 1/3 cup instant nonfat dry milk powder, dash of salt. 6 tablespoons butter. 3 table spoons water, V4 teaspoon vanilla. 2 to 3 drops peppermint extract. 3 to 4 drops red food coloring, 35 re dor pink candies (about inch each). Method: Sift together confection ers' sugar, instant nonfat dry milk powder and salt. Cream butter until fluffy. Gradually blend in l2 of the sugar mixture. Stir in a little of the water'. Beat in remain ing sugar mixture, alternately with the water. Add vanilla, peppermint and coloring. Beat until well blend ed and of good spreading consis tency. Fill layers and frost entire outside of Sweetheart Fudge Nut Cake. Cut a heart pattern 4V6 inches wide by 4:l4 inches long out of waxed paper. Place heart light ly on top center of cake. Insert candies on edge around the heart pattern; remove pattern. Horses Killed YUMA, Ariz 'API?Two horse back riders, Charles W.
