GROVKR FRANCIS Community Reporter The CDP held Its regular meet ing Tuesday night in the RRA building with Hugh Ratcliffe, chair man, in charge. The Lent Leopard family had the devotional. Busi ness discussed included plans for the summer tour and picnic, re seeding the cemetery and placing markers at all unmarked graves. A committee composed of H. F. Francis. George Liner and Bob Williams was appointed to meet with trustees to arrange this pro ject. A social hour followed with Mr. and Mrs. Lynn Henshaw in charge of games. Door prises were award ed to Tommy Leopard, Lynn Hen shaw and Mrs. Vinson Davis. Re freshments were served by the ladies. ? New Way To Deal With Shrimp POPULAR SHRIMP By CECILY BROWN STONE Associated Press Food Editor NEW SHRIMP RECIPE! One we like so much we are putting it on our list of favorites. It boasts an unctuous sauce of an attractive color?the sort we remember eat ing in Paris. Another inducement: | no separate cooking of the shrimp in water for this dish. Flavor? The sauce has a slight bite to it. All the better, we say, to eat with the bland seafood. We served this shrimp in scallop shells as a first course for four, bringing on plenty of toast for sauce-dabbing. After it came broil ed lobster tails with melted but ter, a big salad of romaine, cu in a delightful hum. cumber and French dressing. Des sert was an apple cobbler with a soft custard sauce made from a packaged mix with brandy flavor ing added. Roast chicken would make a good follow-up for this shrimp, too. And dessert might be omitted in favor of cheese and fruit. Or use this shrimp as a main cours, serving three. Spoon it over rice, if you like, instead of toast. Add a cooked green vege table ? green peas, snap beans, broccoli or asparagus. A fine main course youll have, this way, for lunch or supper. One word of advice: this recipe calls for curry powder, and these powders vary in flavor and strength. Find a curry powder to your taste. One we particularly lik is Imported from India. SAUCY SHRIMP Ingredient*: 1 pound shrimp, 2 tablespoons butter, 1 tablespoon flour, Vfc teaspoon salt, "Vi teaspoon celery salt, V4 teaspoon curry pow der, teaspoon paprika, Vi tea spoon Worcestershire sauce. 2 tablespoons chili sauce, V4 pint (1 cup) light cream, Tabasco sauce, 6 to 8 slices bread, butter. Method: Shell and devein shrimp, using cold water to clean; dry well. Heat butter in 1-quart wide-bot tomed saucepan until it hisses. Add shrimp and cook over moder ate heat, stirring gently until opaque through and tinged with pink. Remove from heat. Sprinkle flour, salt, celery salt, curry pow der and paprika over shrimp. Re turn to low heat and stir to coat: add Worcestershire sauce, chili sauce and cream; stir constantly until thickened and simmering; simmer for several minutes but do not boil. Sauce will be on thin side. Meanwhile toast bread and spread with butter; cut each slice into 4 triangles and keep hot in low oven. Spoon shrimp Into 4 scal lop shells or other individual dishes; perch 2 triangles of but terd toast at sides of each shell; accompany with extra toast. Makes 4 first-course servings. Or serve with toast or rice for 3 main-course servings. Note: Use the shrimp that count from 24 to 28 per pound for this recipe. SHRIMP NOTES Know what a real live shrimp looks like? It resembles a lobster, in miniature. The claws of a shrimp are small and the "head'' contains the vital organs. Only the edible tail?shrimp as you know it in the market?is sold. Shrimp varies in size?from tiny | to very large. A handy gadget for removing the shell and deveining shrimp may be bought. The gadget is fine to use when you want to shell and devein raw shrimp, but you can't use it for shelling and deveining cooked shrimp. In buying fresh shrimp, make sure that the flesh adheres to the shell. Flesh that shrinks from the shell is usually a sign of undesir able age. Truth and Consequences VANCOUVER. B. C.
