Creamed cottage cheese, with its sweet delicate flav or, should be used soon after pur chasing to insure maximum flavor quality, preferably within three or four days. Cheese that has become dry ? especially Cheddar. Swiss and Ital ian varieties?may be grated and kept in a covered container in the refrigerator. The j coffee will be chilled, of course, and with it we suggest that you of j fer ore of the season's best bar type cookies. If you think we're ex aggerating. try this recipe and taste for yourself. But first the iced coffee. We have a favorite method of preparing it. When we brew our regular break fast coffee, we make an extra batch. When the extra coffee has cooled, we pour it Into a non-metallic con i tainer. cover it tightly and store it in the refrigerator. At serving time, the coffee is cold and needs a mini muni of ice cubes to chill it further. Milk or cream and sweetening add ed to taste. This method works for us be cause we brew strong coffee to be gin with. If you find this way doesn't suit you. try making cof fee of the strength you like to drink hot, and then pour it into ice-cube trays and put them in the freezing compartment of your re frigerator. (It's a good idea to have extra ice-cube trays on hand for use in warm weather.) Then at serving time, the frozen coffee cubes mav be put into tall glasses and hot coffee (of the strength you like) may be added. Remember that if you make drip coffee, you will get one result if pour the boiling water into the pot all at once: another if you pour the water in the pot a little a a time so u nucrs inrougn siowiy. Ana ue sure to stir the coffee after it has dripped through. In our experience, drip coffee is at is best when the full capacity of the pot is used. Keep superfine granulated sugar on hand for sweetening coffee; it dissolves faster than ordinary gran ulated sugar. Or make up some simple syrup and store it in a tight ly covered jar in the refrigerator. Serve the syrup at iced-coffee time, instead of sugar; it will look atractive if you pour it into a pitch er that matches the one you use for milk or cream. PECAN BARS Ingredients: 1 cup sifted flour, ti teaspoon double-acting baking powder, 1/3 cup dark brown sugar (firmly packed*. '4 cup butter or' margarine, <4 cup dark brown sug ar (firmly packed), 3 tablespoons flour, 2 eg?s, :l 1 cup dark corn syr up. >2 teaspoon salt, 1 teaspoon vanilla. 34 cup coarsely chopped pecans. Method: Sift together 1 cup flour and the baking powder. Stir in 1/3 cup brown sugar.
