EVERYBODY LIKES COOKIES
A well-filled rookie jar has just
as much appeal for adults as it
does for children. Somehow home
made cookies mean home, warm
hospitality and the eagerness of
hungry children. Perhaps cookies
are associated with pleasant memo
ries of grandmother's cookie jar.

clock, whether they are crisp, thin
01 pleasingly plump?in the cookie
jar. on a fancy tray or in a lunch
box.
Pineapple Crunchies are good
for most any occasion. Topped with
golden crushed pineapple and
chopped nuts, these rich, little
cookies are nutritious, too.
Pineapple Crunchies
1 No. 2 can crushed pineapple
1'* cups sifted flour
I tsp. soda
a4 Cup butter or margarine
a4 cup brown sugar
V4 cup granulated sugar
1 tsp. vanilla
l:i i cups corn flakes
1 ?.! Cup Chopped Walnuts
Drain pineapple: reserve syrup.
Sift flour and soda together. Cream
butter and sugar, add flour mix
ture, vanilla and 1 tablespoon
pineapple syrup Stir in corn
flakes. Press into balls. 1> 4 inches
in diameter. Place on cookie sheet
and make an indentation in each
with thumb or a thimble. Kill
with crushed pineapple and
sprinkle with walnuts. Bake in a
moderate oven <350 degrees> about
20 minutes.
Yield: 21 ? dozen. Store uncov
ered.

cookies are ideal for shipping to

Pineapple Scotch Bars
Filling:
14 cup sugar
l'a tbsps. cornstarch
11 2 cups crushed pineapple, light
ly drained
3 tbsps. apricot jam
Crust:
l'-j cups sifted all-purpose flour
12 tsp. soda
12 tsp. salt
JVa cups uncooked rolled oats
1 cup brown sugar, packed
:11 cup shortening
Filling: Blend sugar and corn
starch. Stir into pineapple with
jam. Cook and stir over low heat
until clear and thick Cool while
making crust.
Crust: Sift together flour, soda
and salt. Mix with oats and brown
sugar. Work in shortening until
mixture is crumbly, Pat half into
9-inch square pan. Spread with fill
ing. Press rest of crumbly mix onto
filling, pressing it in so the oats
will not flake off and become dry
Bake in moderate oven 1375' > 35
to 40 minutes. Cool. Cut in bars
or squares next day. Makes 24 j
bars.
