Seafood Souffle Seafood Macaroni Souffle to serve 4-6 takes 8 ounces of elbow macaroni. Prepare macaroni according to package directions. Melt V? c. butter or margarine and blend In 4 c. all-purpose flour. Gradually add 14 c. milk and cook, stirring constantly, un til thickened and smooth. Add 1 c. grated processed Ched dar cheese (about 4 oa), tsp. each Worcestershire sauce and pre pared mustard, >4 tsp. Tabasco, 1 c. flaked seafood and the cooked macaroni. Stir until cheese is melted. Separate 4 eggs, beat yolks un til thick and lemon-colored. Fold Into macaroni mixture. Add a dash of salt to the egg whites and whip until stiff but not dry. Fold Into macaroni mix ture. Turn Into 24 qt. casserole and bake at 325*F. 1 hr. and 20 mln. or until firm. Supper Special This delicious dish makes a fine i supper special for 8. I Prepare S e. elbow macaroni acoording to package directions. I Combine the macaroni, 1 c. chill sauce, 4 c- mayonnaise, X tbsp. ( prepared horseradish, tsp. Wor cestershire sauce, tsp. salt. Mix thoroughly. Combine a (1 lb.) can salmon, . i drained, boned and flaked, and 2 tbsp. lemon Juice. Arrange alternate layers of macaroni, salmon mixture and onion slices ? about 1 medium sized onion, thinly sliced for all. End with macaroni mixture. Cover and bake at 350'F. 40 min. Oarnish with green pepper strips, if desired. Chicken and Noodles Baked Chicken and Noodles to serve 4, takes 8 ounces wide egg noodles (about 4 e.l, cooked ac cording to package directions. Melt 2 tbsp. butter or marga rine over low heat. Add a thinly sliced, medium-sized onlpn and S tbsp. chopped parsley. Saute until onion Is tender. Add a (104-oz.) can condensed cream of chicken soup, c. milk and 2 tbsp. cooking sherry and mix well. Combine noodles and sauce and turn Into greased 2-qt casserole.
