Baste chicken fre quently, usually each time it is turned. To test for doneness take the drumstick and twist lightly and if it turns in the joint you can con sider it done. "Cheep" Chicken Loaf 2 eggs Vi teaspoon poultry seasoning 1 cup fine dry bread cfumbs 1 to 1 '/i cups chopped cooked chicken or turkey V* cup chopped onion V* cup chicken broth or milk >/* teaspoon salt 6 hard cooked eggs, sliced Vi cup chopped celery Vi cup chopped green pepper gravy, mushroom sauce, or cheese sauce, if desired Beat together 2 eggs, broth, poultry seasoning and salt. Stir in crumbs. Reserve 3 center egg slices for garnish and chop remaining eggs. Add chopped eggs, celery, green pepper and onion to crumb mixture and toss lightly to mix. Place in greased 8'/i x 4'/i x 2'/i-inch loaf pan and bake in preheated 350? oven 50 to 55 minutes or until lightly browned. Loosen edges with spatula and turn out on serving platter. Gar nish with parsley and egg slices. Slice and serve. Serve with gravy, mushroom sauce or cheese sauce as desired. Serves 6 to 8. Chicken Soup 1 whole chicken and stock 1 onion 1 teaspoon parsley pepper 2 or 3 stalks celery 3 carrots salt Cover with water and cook in crock pot on low. Add rice or noodles. Chicken Salad 5 cups cooked chicken, cut in chunks (about 5 lbs. raw) 2 tablespoons vinegar 3 cups cooked rice 1 Vi cups sliced celery 1 cup toasted slivered almonds (op tional) 2 tablespoons salad oil 2 tablespoons lemon juice 1 teaspoon salt l'/j cups small green grapes (op tional) 1 (3'/2 oz.) can mandarin orange sections drained 1 Vi cups mayonnaise Combine chicken, oil, lemon juice, vinegar and salt. Let stand while preparing remaining ingre dients (or refrigerate mixture over night). Gently toss together all in gredients. Serves 12. Chicken-Dressing Casserole 2'/j cups seasoned dressing mix 1 stick margarine (melted) 1 can mushroom soup 1 Vi cup sweet milk 3 lb. chicken cooked and coarsely chopped 1 can cream chicken soup 1 can chicken broth 2 tablespoons dried onion mix (fresh onions may be used) Melt butter, add soups and milk. Heat. Place 2 cups dressing mix in bottom of casserole. Place chicken on mix. Pour mixture over dress ing. Pour remaining dressing on top. Bake 20 minutes in 350? oven or until dressing is brown on top. (Test with fork to see if dressing is moist). We "goofed" last week - sorry about that. The microwave egg was not what I enjoyed at Mr. and Mrs. Harvey Warlicks but follow ing are those good recipes for the food I enjoyed at the Warlicks. Pretzel Salad or Dessert 3 cups pretzels crushed 3 tablespoons sugar Vi cup margarine melted Mix and bake 6 minutes or until brown in 400? oven in 9 x 13 inch pan. Cool. Beat one 8 oz. cream cheese with VI cup powdered sugar. Stir in 10 oz. carton whip ped topping. Spread over cooled crust, 6 oz. strawberry jello dissolved in 1 Vi cup boiling water. Stir in 2 10-oz. packages frozen strawberries. Pour on top of cream cheese mixture. Refrigerate. Make Ahead Layered Salad 1 head lettuce torn into bite size pieces 1 Vi cups shredded carrots 1 Vi cups cooked, drained green peas 1 Vi cups chopped celery 1 Vi cups thinly sliced purple onion 1 Vi cups chopped parsley 2 cups sour cream 2 cups mayonnaise V* cup imitation bacon bits Layer first 6 ingredients in order given in 3 quart casserole. Com bine mayonnaise and sour cream. Spread on top and sprinkle bacon pieces on top. Cover and refrigerate.
