Squash and Applesauce 1 large acorn squash, halfed and seeded Margarine 1 cup applesauce Salt Brown Sugar Preheat oven to 350 ?F. Arrange squash cut side down in a shallow pan. Bake until almost tender, about 35 minutes. Turn cut side up and add salt to taste. Brush with margarine. Sprinkle generously with brown sugar. Divide ap plesauce between halves. Return squash to oven and bake an addi tional 15 minutes. Apple Cake Vj cup oil 2 eggs 3 cups apples, pared & chopped 1 Vi cups sugar IV* cups flour (unsifted) 1 teaspoon baking soda Vi teaspoon salt 2 tablespoons cinnamon 1 tablespoon vanilla 1 cup chopped nuts Preheat oven to 325 ?F. Grease a 9" x 13" baking pan. Beat oil and eggs until foamy. Stir in apples and sugar. Mix flour, soda, salt and cinnamon; stir in apple mixture. * Stir in vanilla and nuts. Pour bat ter into baking pan. Bake 45 minutes or until top springs back when touched lightly. Pumpkin Roll 3 eggs Vi cup cooked or canned mashed pumpkin 1 teaspoon baking powder 1 teaspoon ground ginger 1 cup finely chopped nuts (op tional) 1 cup sugar 1 teaspoon lemon juice V* cup plain flour 2 teaspoons ground cinnamon V* teaspoon ground nutmeg Beat eggs 5 minutes at high speed. Gradually beat in sugar. Add lemon juice and pumpkin. Sift dry ingredients together and fold into pumpkin mixture. Pour into a greased and floured jelly roll pan. Sprinkle with nuts. Bake at 375? about 15 minutes. Loosen edges of cake and immediately turn out onto a dish towel sprinkl ed well with powdered sugar. Roll cake in towel immediately. Cool completely. Unroll. Spread filling to within a half inch of edge and reroll. Keep refrigerated. Makes 10-12 servings.
