Spiaach Casserole 6 eggs 1 (24 oz.) carton cottage cheese 6 tablespoons flour Yi cup butter, melted 2 (10 oz.) pkgs. spinach, thawed (or two cups fresh spinach, blan ched) 2 tablespoon minced onion 1 lb. cheese, cubed Beat eggs and cottage cheese and flour until blended. Add butter, cheese and spinach, and onions. Bake in a large covered casserole (2 Vi qt.) for 1 V* hours or until set at 325 ?F. Favorite Banana-Nut Bread 1 cup butter or margarine 2 cups sugar 4 eggs V* teaspoon salt 2 teaspoons soda 2 teaspoons cinnamon 4 cups flour 6 large, very ripe bananas, mashed 1 cup finely chopped pecans Cream together butter and sugar. Add eggs, one at a time, beating well after each addition. Sift dry ingredients together and add to creamed mixture. Add bananas and nuts. Pour into well greased loafpans, and bake at 250 or 300 ?F. from I to 2 hours. A few of the pecans may be saved for sprinkling over the top of each loaf before baking. Makes 2 loaves. . . . Winter rains (Continued from page 6) occurs, we may begin to see some problems. Water that drains off cropland fields may cause soil erosion to oc cur or begin ponding in local fields causing wetness problems. These type of conditions are costly to the local farmers. Fields with soil erosion occuring are loosing valuable to soil, fer tilizer, chemicals, organic matter and soil particles; which may be deposited in local Held ditches, stream channels or ponds. Soil ero sion on cropland causes farm pro fit to decrease and maintenance cost to increase. Many fields in the southern part of the county are faced with soils that have a natural high water table. Winter rain can cause fields to become too wet for large farm equipment to complete harvesting spring crops. The time and money spent in planting a crop in these areas are lost. The farmer's potential profit is cut once more. Wetness problems can be easily solved by the installation of field drain tile if adequate outlets are available. Farmers that are faced with soil erosion or drainage problems should contact their local Soil and Water Conservation District Of fice for assistance with conserva tion needs and application. For assistance with erosion and drainage problems contact the Hoke County Soil and Water Con servation District Office.
