1 cup flaked coconut

Combine butter, evaporated milk, sugar and salt in sauce
Mn over medium heat. Bring to a boil. Cook S minutes, stir

Potato Fondant

1/4 cup water 1 teaspoon almond extract
1/4 cup milk 1/2 cup ground or finely
1 tablespoon Danish chopped toasted almonds
flavor margarine or 4-1/2 cups (1 pound) sifted
butter confectioners' sugar
1/2 cup Borden's Instant
whipped potato flakes
In a 1-quart saucepan combine water, milk, and margarine or
butter; bring to a boil. Remove from heat; add potato flakes.
Stir until all liquid is absorbed. Refrigerate until completely
cooled. Turn into large bowl. Stir in extract, almonds, and sugar.
Refrigerate?one hour. Roll candy between two sheets of waxed
paper to a thickness of 1/4 inch. Cut into desired shapes with
cookie cutters. If desired, decorate with colored sugars, walnuts,
or chocolate shot.

and Meat Board reports that
retail meat prices have gone
up only 15 per cent since 1947,
while nourly wages have risen
an average of 110 per cent.
Just to make sure the point
Is gotten across, the Meat Board
expresses It In a couple of other
ways;
- An hour of labor today
purchases well over 50 per
cent more meat than 20 years
ago.
- Each American today gets
an average of 20 pounds more
meat per year than his meat
dollars would have purchased as
recently as 1950.
Talking purely In terms of
dollars. It Is admitted that peo
ple are spending more for meat
now. But since the average,
family Income is higher, the"
proportion spent for meat Is
smaller than In earlier years.
The average famly of five
gets 850 pounds of meat In a
year for 4.5 per cent of that
family's disposable Income.
Back In 1936, the family of five
spent 5.7 per cent of dispo
sable Income for 650 pounds of
meat.

Uruguay.
Americans, meanwhile, post
a red meat consumption level
of 175 pounds a year - a poor
fourth in world rankings for
beef and veal, in pork, we're
fifth.
