2 cups sifted ad-purpose flour
1 teaspoon salt 1
2/3 cup plus 2 tablespoons solid vegetable shortening 1
% cup ice water
1 cup sugar 1
1 teaspoon cinnamon
1 teaspoon nutmeg 1
7'; cups thinly sliced pared green apples
In a medium mixing bowl mix flour and salt Cut in
shortening with a pastry blender or two kr.ives until the
particles resemble giant peas Sprinkle with water, a little
at a time, mixing lightly with a fork, until all flour is
moistened Make a ball with the dough and place on a
lightly floured cloth-covered board. Divide dough in half.

Roll out into 12-inch circle Fold pastry in halt and I
carefully transfer to 9-inch pie plate Unfold and loosely I
place pastry in pan. leaving an overhang Combine I
cinnamon, nutmeg and sugar and mix thoroughly with I
apples Turn into pastry-lined pan Trim off overhanging I
edges Roll out remaining half of dough for top crust large I
enough to extend 1 inch beyond edge of pan. Fold pastry I
for top crust m quarters Moisten edge of bottom crust I
with water Place folded pastry over pie. Unfold Fold edge I
of top pastry under edge of lower pastry on rim Seal ry I
pressing with fingertips; flute Make several slits near I
center to allow for steam to escape Sake in 35Q? F oven I
for 50 minutes, until pastry is well browned. Makes I
