STALK CRISP CELERY SWEET AND SOUR CELERY 3 cups sliced celery 1 /4 cup chopped fresh onion 1/4 cup chopped fresh green pepper 1 clove garlic 1/2 teaspoon salt 2 whole cloves 1 bay leaf 1/8 teaspoon pepper 1/2 cup water 1 tablespoon sugar 1 tablespoon salad oil 1 tablespoon fresh lemon juice i In medium saucepan combine celery, onion, green pepper, garlic, salt, cloves, bay leaf, pepper and water. Bring to a boil; reduce heat and simmer, covered, for 15 minutes, I until celery is crisp-tender. Remove garlic, bay leaf and cloves. Drain and discard liquid. Add sugar, oil and lemon juice to celery. Sprinkle with cornstarch and stir until well mixed. Cook over low heat, stirring constantly, for 2 to 3 minutes or until celery is evenly coated.
