Place 1 piece in top of a W small double boiler. Add lemon juice and egg yolks. J Place over hot water (not boiling) and stir constantly When butter or margarine is melted, add a second piece and as the mixture thickens add the third piece Remove from water at once Add salt and pepper. Serve over hot cooked asparagus Makes 6 servings
