V. cup butter or margarine, divided
1 tablespoons fresh lemon juice
3 egg yolks, well beaten H
1/16 teaspoon salt
1/16 teaspoon pepper
^ 2vj pounds fresh asparagus, cooked fl
H Divide butter into 3 portions. Place 1 piece in top of a
W small double boiler. Add lemon juice and egg yolks.
J Place over hot water (not boiling) and stir constantly
When butter or margarine is melted, add a second
piece and as the mixture thickens add the third piece
Remove from water at once Add salt and pepper. Serve
over hot cooked asparagus Makes 6 servings
