2 cups sifted enriched all-pur
- flour
ii 34 teaspoon baking soda
12 teaspoon salt
14 cup sugar
1 -teaspoon grated orange rind
12 cup raisins
1 egg, well beaten
34 cup buttermilk
14 cup shortening, melted
Mix end sift . dry .ingredient; mix
In orange rind and raisins. Beat
egg until thick and palercolored.;
add buttermilk and orange juice
and stir welL ; Add to dry .ingre
dients - along with shortening
(slightly cooled) and stir only en
oughto moisten dry ingredients,
Mixture ' Will look lumpy. Fill
greased muffin pans two-thirds full
and bake in a hot (425 F.) oven
about 20 minutes or until dona.

Cocoa Tapioca Cream
1 tall can evaporated milk
2 cups water
5 tablespoons quick-cooking ta-

18 teaspoon salt '
12 cup sugar
14 cup cocoa
1 egg, separated ,.
, 1 teaspoon vanilla
Mix evaporated milk and water
in top part of double boiler and
heat to just below the boiling
point .over direct heat, Mix tapio
ca, salt, sugar and cocoa well; stir
into hot milk with a whisk. Coofc
over boiling . water, stirring fre
quently until thickened and tapio
ca is clear, about 10 minutes. Beat
egg yolk and add a little of the hot
mixture; pour back and cook, over
low heat, stirring constantly, for
1 minute. Romove from heat and
add .vanilla. Beat -egg white until
stiff and stir in hot mixture slow
ly. Chill. 4 to 6 servings.
