By CECILY BROWNSTONE Associated Prrss Food Editor Cooks of German background long ago introduced Americans to the delicious and hearty meat dish called Sauerbraten? beef marinat ed in spiced vinegar, then cooked on top of the range and served with gtngersnap - flavored gravy. Now this cosmopolitan version of pot roast is often sought after here. Although Sauerbraten is usually accompanied by potato pancakes, you might like to save yourself the chore of preparing them and serve egg noodles instead. Noodles are so much a part of the German cui sine that you needn't feel you are going too far afield In offering them. When we served Sauerbraten, made from the following recipe, to some old devotees of this dish they gave it high praise. You'U hAe to begin your marinating prepara tions a couple of dayi before you cook the meat, ?o plan accordingly. Sauerbraten with Noodles Ingredients: 2 cups cider vine gar, 1 cup water, 3 medium-sized onions (thinly sliced), 2 table spoons sugar, H teaspoon pepper corns, Vj teaspoon whole cloves, 4 bay leaves, 2 teaspoons salt, IVi teaspoons dry mustard; 4 pounds boneless beef rump, 1 tablespoon flour, 1 teaspoon salt, !4 teaspoon pepper, cup aalad oil, 1/3 cup Witnesses Will Attend Meeting The Morehead (Sty East Unit of Jehovah's Witnesses Is making plana to attend a three-day train ing program March 1S-18 In Kin atoo. Method: Mix together well the vinegar, water, sliced onions, su gar, peppercorns, whole cloves, I bay leaves, 2 teaspoons salt and ! mustard. Pour over meat in a non metallic container; cover. Chill for 1 2 days, turning meat each day. Drain meat and wipe dry; strain marinade mixture and reserve. 1 Mix together the 1 tablespoon flour, 1 teaspoon salt and tea spoon pepper; rub this mixture into the meat. Heat oil in kettle; add meat and brown on all sides. Add % cup of the marinade mixture. Cover and cook over low heat 3V4 to 4 hours or until meat is tender when center lis pierced with a long fork; turn meat occasionally as it cooks. Remove meat; add gingersnap crumbs and marinade mixture (to taste) to drippings in kettle. Cook and stir constantly until blended; J strain. Because the amount of meat drippings will vary, you may ; have to correct this gravy by add ing water or stock, more ginger snap arumbs or marinade mixture, >r by thickening it with a little flour Slice meat thin and reheat it in [the gravy. Makes 8 servings. The first few slices of beef on either j side will be less firm than the re j maining slices. | Note: You'U need 8 or 9 ginger snaps that are lVt Inches wide to make 1/3 cup tine crumbs.
