Food Conservationist Says Aspirins Don't Keep Apples Aspirins ire for curiae head- < aches? not for preserving apples! Fallacies such as this are frowned upon by bacteriologists and food conservationists, as well as those in the medical profession; because it is their belief that the indiscriminate and regular use of any drug as a food preserv ati ve is to be condemned. According to Iola Pritchard, agricultural extension service food conservation and marketing spe cialist at State College, reports have come from all parts of the state over the years that drugs, such as aspirins, are being used as food preservativea. Since this is the apple season, there have been requests for information on preserving apples with aspirin. Several years ago when the ques tion first came to the attention of Extension's food conservation and marketing specialists, ? letter was written to Dr. Howard Reynolds, Bacteriologist, Foods and Nutri- , tion Division of the U. S. Depart- . m?nt of Agriculture. ( Dr. Reynolds, in return, had this to say: "The use of aspirin as a substitute for heat treatments in { the canning of apples or other fruits is Inadvisable and cannot be relied on to prevent spoilage or , give satisfactory products. Ade quate heat treatments are safer j and more certain to assure suc cess." I He points out by way of explana tion that "aspirins do not prevent enzymatic reactions. Apples can ned, using aspirin without heat treatment, are likely to become . brown and discolored, Just as the j surface of cut apples becomes , brown on exposure to air." Dr. Reynolds foes on to em phasize that "even If discoloration , is controlled, ai it can be by the addition of ascorbic add, other enzymatic changes will result in , products which will usually lose mo?t uf their natural flavor and aroma after storage for a few ly^ilry " The idea that aspirin eaa be used satlifactoHly for perservlng apples i is a widespread one, and USDA re ports that each year numerous re- , quests are received for informa- , tion on its use. "It's so much easier, in view of . all that me know," concludes Mia* Pritchard, "to can apples correet ly, and there .is a recommended method which has proved ttself in all respects if followed, correctly." Uw boiling water bath is m* method of processing traits and other acid foods. The recommend ed method of preserving apples is' as follows: 1. Fare and core apples. Cot in slices. 2. Use ooe of two methods Raw Pack or Hot-Pack. For the Raw Pack method, pack prepared ap plet raw. Cover slices wMfc hot medium syrup.
