EASY-TO-MIX COFFEE CAKES Try this recipe for a rich, lusc ious coffee cake, chock full of nuts and raisins. It will satisfy every palate and make young and old alike come back for more. It’s ideal for school breakfast and just the thing for tasty afternoon snacks. Mix it by the new short-cut method in your electric mixer and serve it with cups of hot choco late or steaming coffee. Have shortening or butter at room temperature. Assemble all ingredients and utensils needed. Grease a 9-inch cake pan. Sift flour once before measuring. Grate lemon rind and squeeze juice. Preheat oven to baking tempera ture 350 degrees. 14 cup chopped nutmeats 8 cups all-purpose flour I*4 cups sugar 3 tsp. baking powder 1 tsp. salt 1 cup shortening 1 cup milk 3 eggs, unbeaten grated rind of one lemon \ cup raisins (optional) 1 tbssp. lemon iuice Sprinkle greased cake pan with chopped nutmeats. Sift together into a large bowl, flour,, sugar, baking powderr and salt. Add shortening, milk, eggs and grat ed lemon rind. Bake for about 25 minutes in oven which has been preheated to 350 degrees. Sour Cream Coffee Cake 1 cup sour cream ’4 tsp. soda 2 eggs 114 cups bread flour 1 cup sugar 2 tsp. baking powder *4 tsp. salt Combine and beat well the sour cream, soda and eggs. Add the flour, sugar, baking powder and salt which has been sifted to gether. Beat the batter until it is smooth.
