These spe cial foods evoke cozy memories of Christmas past and signal the beginning of McWHITE another season. With the help of some talented cooks, we present some must-try holiday goodies! ? GRAHAM CRACKER ROLL 1 pound dates, cut 1 cup chopped walnuts 1 cup evaporated milk 16 oz. mini marshmallows 1 entire box graham crackers, crushed (save 8 squares to roll in) Mix all ingredients in a large bowl. Use your hands to shape into 2 rolls. Cover with leftover crushed graham crackers. Cover with plastic wrap and refrigerate 3 days. Slice and serve with whipped cream. CHOCOLATE PRESS 'A cup butter 1 / cups graham cracker crumbs 1 can sweetened condensed milk 1 6-ounce pkg. chocolate chips 1 3'A ounce pkg. coconut 1 cup chopped nuts Melt butter in a 13-by-9-inch pan. Add crumbs to the butter and press down. Spread milk over crust. Top with chocolate chips, nuts and coc onut. Press down. Bake at 350 de grees for 35 minutes. ? Sylvia Freeman COCONUT BALLS 2 pounds semi-sweet chocolate chips (3 12-ounce bags) 1 pound chopped pecans 2 pounds coconut 1 large can sweetened condensed milk 1 box powdered sugar 2 sticks paraffin wax 1 stick margarine Melt wax over low heat. Add chocolate chips and keep warm. Combine remaining ingredients in a bowl and mix well with wet hands. Shape into balls, then dip in choco late. Place on wax paper to cool. Delicious ! ? PECAN FRUITCAKE 1 pound butter or margarine 6 eggs, separated 4 cups plain flour 1 tsp. baking powder 2 cups chopped pecans pound candied cherries 'A pound candied pineapple I'A tsp. lemon extract 1 pound brown sugar Cut cherries and pineapple in fourths. Add half of flour, all the nuts, mix together and set aside. Cream butter and sugar; add egg yolks, flavor, remaining flour and baking powder and mix well. Add fruit, flour and nut mixture. Allow to cool to room temperature. Add buttermilk and Cool Whip. Mix well and stir in pecans. Refrigerate. Yield: 12 servings. APPLESAUCE CAKE 3 A cups sugar 1 cup butter 4 eggs 3 tsp. baking soda, dissolved in warm applesauce 2 cups applesauce 3A cups all-purpose flour 1 tsp. salt 1 tsp. ground allspice 2 tsp. nutmeg 2 tsp. cinnamon 1 tsp. vanilla extract A cup grated fresh apples, peeled 1 cup chopped black walnuts 'A cup raisins, optional Warm applesauce and blend in so da. Set aside. Cream sugar and but ter. Add eggs and applesauce. Sift together flour, salt and spices. Stir in grated apples, walnuts, raisins (if de sired), vanilla and flour mixture. PETITE ORANGE FRUIT CAKES A cup butter or margarine 1 cup sugar 2 eggs 2 cups all-purpose flour 1 tsp. soda % cup buttermilk 1 grated orange peel 1 pound chopped dates 1 cup chopped pecans Cream butter, add sugar and eggs (one at a time). Beat until blended. Add flour and milk alternately. Add dates, orange peel and nuts. Bake in tiny muffin pans at 350 degrees. Yield 7 or 8 dozen. Glaze while hot and put 1/2 can died cherry on top of glaze. Glaze 1 cup sugar %cup orange juice 1 grated orange peel Bring to a boil and boil 1 minute. Spoon over muffins. Pretty and delicious.' ? SWEET POTATO PIE 1 A cups sweet potatoes, mashed 54 cup sugar 54 tsp. salt 'A tsp. nutmeg '/i tsp. cloves 1 tsp. cinnamon 2 eggs, well-beaten 'A tsp. vanilla V* cup margarine, melted 1 cup milk 9-inch deep-dish pastry shell, un baked Combine sweet potatoes, sugar, salt, spices, egg and vanilla. Melt butter in milk, gradually pour in potato mixture and stir until well blended and smooth. Pour into shell and bake at 400 degrees 40 minutes or until lightly browned. ? Daphne Mc White ?
