COHOON.IH Engagement announced Mrs. Hersey Earl Gregory of Route 4, Hertford announces the engagement of her daughter, Phyllis Gay Gregory to George Walton Cohoon, III, son of Mr. and Mrs. George W. Cohoon, Jr., of Elizabeth City. The prospective bride is a graduate of Perquimans High School and College of The Albemarle and is employed with New Hair Dimensions, Elizabeth City. The prospective bridegroom is a graduate of Northeastern High School and is employed with Jessee Construction Company, Virginia Beach, Virginia. The wedding is planned for September 9, at Woodville Baptist Church at 2 p.m. Service news Cadet Eric R. Durant, son of Benjamin C. and Edna Z. Durant of 229 Market St., Hertford, received practical work in military leadership at the U. S. Army ROTC advanced camp, Fort Bragg, N.C. The six-week camp, attended by cadets normally between their third and fourth year of college, includes instruction in communications, management and survival training. Successful completion of the advanced camp and graduation from college results in a commission as a second lieutenant in either the U.S. Army, Army Reserve or National Guard for the cadet. Durant is a ROTC cadet and a student at Elizabeth City State University. Hertford VFW news Members of Hertford VFW Post met Wednesday evening at Jimmy's Barbeque with a good turn out. Post Commander John Decker conducted the meeting since Commander Emmett Landing was on vacation. District Commander Curtis Silkins informed the members that membership was very important, and eligible veterans for the VFW should realize non membership in the VFW could result in loss of many benefits Reorganization increases capacity A recent administrative reorganization at College of The Albemarle is expected to result in a smoother flow of information, design, and printing services for the college, according to Pam Whitley, dean of college advancement. Whitley was promited from director of resource development to the new position late last month when COA President Dr. Parker Chesson established the Office of Media Services. The office, which is under the supervision of the dean, will coordinate all public information, printing, and audiovisual services for the instruction. "A recent Title III funded marketing study by consultants from Florida Junior College indicated that we should better coordinate our efforts in these areas," Chesson explained. He said the newly-created office will serve as a more cohesive unit in producing the growing volume of graphic materials and public infmation necessary to properly maintain public awareness of opportunities that are available at the college. EGGPLANT FRITTERS 1 eggplant weighing about one pound vegetable oil salt to taste fresly ground pepper to taste 1 cup finely chopped green onions 1 T. finely minced garlic 2 eggs, lightly beaten > lc. flour 1/3 cup milk 1 T. baking powder 1/4 cup finely chopped chives Peel eggplant and cut into 1/4 inch cubes. There should be about four cups. Cook eggplant in 1/4 cup oil until tender. Add the onions and garlic and cook about one minute. Drain well. There should be about two cups. Stir eggs and flour together and add milk. Stir in baking ppwder and chives. Add eggplant and mix People briefs Mrs. Zula H. Add oil to skillet about 1/4 inch. When hot, drop batter about two tablespoons at a time into oil. Cook until brown on one side, about one minute. Turn fritters and cook on the other side, about one more minute. Drain well on paper towels. Continue cooking until all the batter is used. Add more oil if necessary. Yield: 24 fritters. CAPONATA 2 medium onions, chopped 1/2 cup olive oil 2 eggplants, peeled, chopped into 1/2 inch cubes 1/2 cup pine nuts or walnuts 1/2 cup toasted sesame seeds freshly ground black pepper white wine, if desired 1 cup dicedcelery 2 1/2 cups fresh or canned tomatoes 1/4 cup red wine vinegar 2 ounces caper to taste Saute onion in olive oil but do J not brown. Add cubed eggplant and cook about ten minutes, stirring often. Add nuts, seeds ; and pepper. While cooking if it is ' necessary to add more liquid, white wine or vinegar may be added. Add celery, tomatoes, vinegar, and capers. Simmer over low heat for 30 minutes, stirring occasionally. This '' mixture can be served as a hot - vegetable dish, a cold salad, or served hot or cold on sandwiches. It is especially good stuffed into a pita pocket with grated cheese ' and heated. '"???
