COMMUNITY Tender loving care and extra fertilizer are the main ingredients for growing larger than average tomatoes in Perquimans County according to Fred Harris of Hertford. Harris grew these tomatoes, averaging in weight from one to one and three-quarter pounds, in his garden on Pennsylvania Avenue. Late tomatoes make an excellent sauce I Perhaps you have an over abundance of late tomatoes In your garden, or mabye a generous neighbor has provided you with the same. If so, try this homemade tomato sauce. The portions can certainly be changed to accomodate the quantity of available tomatoes. They prepared the Eggplant Parmesan for your family using your home made sauce. The sauce may be canned or frozen for future use on pasta, veal, or vegetables. TOMATO SAUCE 1 gallon whole peeled tomatoes V4 c. tomato paste 3 T. olive oil 3 cloves garlic, minced V4 c. chopped onions c. parsley 1 T. oregano IT. basil 3 T. grated Romano Cheese 1 T. baking soda (The baking soda cuts the acid. You may substitute sugar, salt and ground pepper to taste.) Saute the onions and garlic in olive oil in a large pot until th,e onions are brown. Add remaining ingredients and clock 15 minutes. Stirring constantly to break up the whole tomatoes. The sauce Nixon earns Boy Scouts highest merit award Eric Christopher Nixon, 13, of 2615 Derbyshire Road, Maittand, Florida, has earned the highest achievement award the Boy Scouts of America offers to Scouts, the EAGLE AWARD. Each candidate must earn 21 merit badges and successfully complete a community church or synagogue-related service project to earn his Eagle. Nixon chose to help our national bird, The American Bald Eagle throgh 'Save Our American Raptors (S. 0. A. R. ) Inc., and Florida's Eagle Lady, Mrs. Doris Maeger. LANDSCAPING THE EAGLE EXHIBIT AREA was his project that took over 230 hours of work and the cooperation of more than 17 people working closely together to clear out underbrush, providing parking spaces outlined with mulch and railroad ties, put up fences and build a water pool and seating area in the exhibit area. Nixon also raised $689 in cash donations for S. O. A. R, to help educate school childrren and adults about the eagle and other birds of prey. Eric has served in leadership position as Dean Chief, Librarian, Assistant Patrol Leader, and Senior Patrol Leader. He was recently received into THE ORDER OF THE ARROW. Place half of the j slices in a two quart casserole ' and top with one cup of sauce. Sprinkle with generous layer of Parmesan cheese. Repeat' layers.
