COMMUNITY Creative new recipes to enhance your poultry dishes Chicken is a stopel in my kitchen. The versitile bird pre sents an almost limitless list of possible preparations. Enjoy these two variations. The Coun try Captain and Teriyaki Chicken are both delicious served with buttered rice. Add a tossed salad and bread to com plete the meal. COCK'S c<m BY EDNA WOWERTON . A COUNTRY CAPTAIN 1 3-pound frying chicken one-third cup flour 1 teaspoon salt V? teaspoon black pepper V? cup butter Vi cup finely diced onion Vj cup finely diced green pepper 1 dove garlic, minced 1V4 teaspoons curry powder Va teaspoon dried thyme 2 cups canned stewed tomatoes 3 tablespoons dried currants y4 cup blanched toasted almonds Cut the chicken into serving pieces; wash and dry them thor oughly, and coat them with a mixture of the flour, salt, and pepper Heat the butter in a large skil let and brown the chicken. Re move the chicken and add the on ion, green pepper, garlic, curry powder, thyme, and the stewed tomatoes to the skillet. Stir to loosen the browned particles on the bottom of the skillet. Return the chicken to the skil let, cover, and cook slowly 25-30 minutes or until tender. Stir the currants into the sauce and garn ish with the toasted almonds. Serve the chicken with boiled rice and chutney. TERIYAKI CHICKEN 1 3-3 V* pound chicken, split or cut into serving pieces v? cup sake or sherry V* cup oil V? cup soy sauce 1 clove garlic, crushed 1 teaspoon ground ginger 1-m tablespoons sesame seeds Mix the sake or sherry, oil, soy sauce, garlic, and ginger. Pour over the chicken and marinate for 2 hours. Turn the chicken over occasionally during this pe riod to keep the pieces well coated with die marinade. Broil 5-6 inches from the flame, basting frequently with the mari nade and turning the chicken ev ery 5-10 minutes. When almost done, dip each piece of chicken in the marinade, roll thoroughly in sesame seeds, and return to the broiler to brown. Watch the chicken carefully to make sure that the sesame seeds do not burn. i I Community Calendar Santa to visit Durants Neck Santa Claus will visit the Du rante Neck Volunteer Fire De partment on Sunday, Dec. 15, 1985 from 2 until 4 p.m. Refresh ments will be served. Christmas open house set With a chilling nip in the air and Holiday decorations on ev ery corner, many are looking for ward to the hustle and bustle of the holiday season as well as holi day traditions. To help you get in the holiday spirit, Perquimans County Extension Homemakers will hold their twenty fifth Christmas Open House on Tues day. December 10, 1985. at the Perquimans County Extension Office from 7:00-9:30 p.m. The "Heritage Christmas" will feature many exhibits, demon strations and a wealth of ideas for foods, crafts and gifts. Food and craft exhibits will in elude dolls, baskets, breads, coo kies, cakes, hor d'oeuvres and gift giving ideas for home canned foods. Demonstrations will include Christmas Card Baskets by Ella Ray Bates, Pine Needle Orna ments by Paige Underwood and Candy Making and other food demonstrations by Juanita T. Bailey. We hope you'll be with us for our 1985 Open House on De cember 10th. Admission of $1:00 for adults and $.50 for students will include refreshments, recipes, etc. Mark your calendars today!
