Chanukah Recipes
Chanukah is a holiday out of our history
Why is it 80 joy-filled is surely no mystery.
The menorah we light is « symbol of freedom
FVom the tyramiy of Syria and Antiochus, the hedon.
We celebrate for eight days and nights.
Add a candle a day and a gift for each light.
Latkes (or pancakes) are served as a treat
Hoi, crisp and sizzling — ready to eat!
Chanukah White
Fruitcake
'/i cup golden raisins
'/2 cup apple juice or sherry
1 Vi cups sifted flour
V\ tsp. baking soda
l/8tsp. salt'
1 V*i cups confectioners sugar
2/3 cup soft butter or margarine
6 egg whites
2 Tbs. lemon juice
Vx tsp. vanilla
2/3 cup red and green candied
cherries
Vx cup candied pineapple, chop
ped
'/3 cup blanched pistachio nuts
(skins removed)
Va cup blancheid slivered
almonds (skins removed) '
Va cup flour
candied fruits and nuts for gar
nish
1. Place raisins in a bowl and
cover with either fruit juice or
.liquor. Let stand overnight;
' when ready to make cake, drain
and discard liquid.
2. Heat oven to 325 degrees.
3. Sift the J ‘A cups flour,
baking sodai, salt ^ha''c6Wfec-
tioners sugar into a mixing
bowl. Add butter and beat until
creamy with an electric jnixer.
Add egg.whites one at a time,
beating well after each addition.
4. Mix in lemon juice and
vanilla. Place cherries, pineap
ple, pistachio nuts, and
almonds in a bowl; dredge with
'/i cup flour. Fold -fruits into
batter. Pour into a greased and
floured 10 inch tube pan.
5. Bake 50 to 60 minutes or
until a cake tester inserted in
center comes out clean. Top
should be only slightly brown

Fruit Latkes
2 medium apples
2 Tbs. sugar
tsp. cinnamon
1 egg beaten
Yx cup milk
2/3 cup applesauce
1 cup flour
,3 Tbs. oil
1. Core and slice apples. Mix
sugar and cinnamon together
and sprinkle over apples. Mix
eggs, milk and applesauce and
J)eat well. Pour over apples.
2. Mix in flour and beat well.
3. Fry in oil pressing two
slices of apple into each pan
cake. Serve with powdered
sugar or syrup.
Potato Latkes
5 large potatoes
1 large onion
2 eggs
'4 cup matzoh melal' "
Vx tsp. salt (or more to taste)
Oil for frying
1. Grate potatoes and strain
through a strainer until most of
the water has drained through.
2. jQrate onion and add
onion, eggs, salt and matzoh
meal to potatoes. Mix well.
3. Heat about Vx inch of oil in
frying pan. Add potato mix
ture, one tablespoonful at a
time, into hot oil. When golden
brown on edges, turn over and
brown on other side. Remove
from pan and drain on paper
toweling or brown paper bag.
A SURPRISING CHANUKAH FACT
Most of US know the story of Chanukah. The wicked King Antiochus
wanted the Jews to bow down to the Greek idols and not practice the
Jewish religion anymore. Antiochus* soldiers made the Holy Temple
unclean by bringing in idols and unkosher animals to sacrifice. Any
one found practicing Judeusm was murdered cruelly.
A small army of Jews, led by Judah the Maccabee and his brothers,
fought the Syrian soldiers. On the 25th day of the Hebrew month of
Kislev, the Maccabees entered the Holy Temple in Jerusalem. They
cleaned the Temple and dedicated it to God again.
Most of us think that’s the end of the story. We think the miracle of
oil in the Temple is the last chapter.
Here’s a surprising fact* After the Jews entered the Holy Temple,
THE WAR CONTINUED FOR ANOTHER 23 YEARS!
Here’s the part of the story that you probably didn’t know:
The battles became even more difficult During this time* King
Antiochus died and his son came to power. The cruel treatment of the
Jews continued.
All of the Maccabees, except for Simeon, were killed in battle. The
four brothers - Judah, Eleazar, Jonathan and Yohanan - all died
fighting for the Jews. Simeon became both the leader of the army and
the High Priest (religious leader) of the Jews.
When the war was finally over, the Jews won complete inde
pendence. They were free to practice their religion and to rule them
selves.
But when we tell the story of Chanukah, the part we remember most
is the miracle of the oil in the Temple. For hundreds of years, Chanu
kah was mainly a celebration of the rededication of the Holy Temple
to God.
Because of the many wars the Jewish people have fought to protect
the State of Israel, the battles of the Maccabees have become impor
tant too. Now we celebrate both the miracle of the oil and the bravery
of the Jewish people!
