Rice Kugel 1 cup white rice (uncooked) 2 cups water 1 tsp. salt 1 tblsp. margarine 2 tblsps. sugar cup com syrup 2 eggs 1 cup fruit cocktail, drained 8 apricot halves 1 tblsp. brown sugar In a large pot, cook rice, water, salt and margarine for 15 minutes. Add remaining ingredients except apricots. Mix. Pour into a greased pan. Top with apricot halves and brown sugar. Bake 350® for 45 minutes. Serve hot or cold. Poppy Seed Kugel A poppy seed noodle kugel is easy to prepare and tasty with a dairy meal. It tastes better served warm rather than cold. 3 eggs 8 oz. wide noodles, boiled and drained V4 cup poppy seeds 1 small onion, diced 2 tablespoons melted butter Vi cup com flake crumbs 1 tablespoon butter Combine all the ingredients except the com flake crumbs and 1 tablespoon of butter. Mix well. Pour into a well greased 6-cup round casserole dish. Sprinkle crumbs over the top and dot with the one tablespoon of butter. Bake for V2 hour, or until the kugel is solid, at 350 degrees. Spicy Short Ribs Spicy short ribs can be served for luncheon at one of your holiday meals. They are inexpensive, an important considera tion when food budgets are strained. Serve over rice. 3 lbs. beef short ribs, cut into serving portions Va tsp. black pepper 14 cup flour ^ tsp. cinnamon 1 tblsp. oil 1 large onion, cut into rings 1 cup dried apricots 2 tblsps. brown sugar 2 tblsps. vinegar 3 cups chicken soup Mix pepper with flour. Place in a paper bag. Add a few short ribs at a time. Shake to coat. Brown meat in hot oil with onions. Mix remaining ingredients, except apricots and pour over meat. Bring to a boil. Cover and reduce heat. Simmer for 2 and V2 hours or until meat is tender. Add apricots after 1 hour. Turn meat a few times to prevent sticking. Add water if necessary. Makes 4-6 servings.
