Chicken Salad
In Avocado
Chicken salad in a half an
avocado makes a fine first course
for a party or a main dish for a
women’s luncheon. This recipe
makes 24 portions.
2 lbs. cooked chicken breast
4 green peppers
4 red peppers
6 stalks celery
2 large dill pickles
1 large purple onion
2 large cans pineapple chunks, drained
200 grams thousand island dressing
12 small avocados
Slice all the ingredients very thinly, except the avocados
which are cut into halves, with the pit remov^. Mix the sliced
ingredients with thousand island dressing. Fill each avocado
half with chicken salad mixture. Place each half on a salad size
plate on a lettuce leaf and garnish with a tomato and a lemon
wedge. Serve immediately. Some lemon juice can be sprinkled
on the avocado halves to keep them from turning black.
Eggplant Pie with Mushroom Sauce
This recipe makes an elegant m£un dish for a brunch. Prepare
just before serving.
1 large eggplant
8 ozs. farmer cheese
3 ozs. cream cheese
4 ozs. grated munster cheese
1 medium onion, finely chopped
4 oz. can drained, chopped mushrooms
V2 tsp. salt
1 tsp. black pepper - “ -
Bake whole eggplant on top of rack on direct flame. Peel under
running water. In a bowl, mash eggplant. Add cheeses,
mushrooms, onion and seasonings. Beat together for 5 minutes.
Pour into a prepared 9-inch pie tin with dough in it. Add egg
plant mixture. Cover with top crust. Cut about 6 slits with a
knife. Seal edges and flute. Cover edge of pie with aluminum
foil strip, remove for last 15 minutes of baking. Bake at 400
degrees for 15 minutes. Serves 6.
