Passover Delectables
Chicken and Asparagus Casserole
2 whole broiler'fryers {breasts or other pieces, boned & skinned)
1V2 lbs. asparagus, cooked & cut into spears, drained
1 can chicken broth, or IV4 cups home-made clear broth
Vi cup oil or nyafat, melted
salt & pepper to taste
Vz cup kosher L ’Pesach mayonnaise or home-made dressing
1 tsp. lemon juice
cup mushroom slices, if desired
Sprinkle chicken with seasonings. Place in saucepan after
heating oil. Add chicken pieces and cook, turning frequently
until brown on all sides. Remove from pan; reserve drippings.
Cool slightly; cut into strips. Brush the bottom of a shallow bak
ing dish, preferable in which the dish may be served. Arrange
asparagus on bottom of the pan. Top with chicken strips, broth,
dressing and mushrooms. Sprinkle with a little cake meal. Cover
with foU; bake at 375® 30 to 45 minutes until browned on top
and bubbly. Good with matzo meal pancakes or kugel. Serves
4 (may be doubled or tripled.)
Fish and Apples
1 lb. fish fillet, cut into portions
salt and pepper to taste
paprika
1 tblsp. lemon juice
V2 cup sliced green onions
1 cup sliced mushrooms
1 cored & sliced apple
Sprinkle fish with seasonings, squeeze lemon and pour juice
over all. Place fish in baking pan. Let stand to absorb marinade.
Add vegetables which have been parboiled briefly. Bake at 350“
until fish flakes easily when a fork is inserted. When serving,
add apple slices; garnish with parsley. Serves 4.
Creole Napoleons ala Matzo
6 tbisps sugar 6 thin tea matzos
1 tsp. salt water
1 Vi tsp. ground cinnamon 2 egg whites
6 apples 2 tbisps. sugar
1 pkg. kosher L ’Pesach lemon custard mix
Mix sugar, salt and cinnamon until blended evenly. Pare, core
and slice applies. Dip matzos in water just long enough to
soften. In an ovenproof dish, layer matzos, apples and sugar
mixture, using one third of the sug£ir mixture per layer, and
ending with a layer of apples. Place dish in a pan of water and
bake in a 350° oven until apples are done (about 45 minutes).
Beat egg whites until stiff, gradually adding the 2 tbisps. of
sugar. Spread on top of apples and return to oven until mer
ingue is brown. Cool.
To serve, cut into squares and top each square with lemon
custard, prepared according to package label.

prayer, domestic budget cuts
as well as pending congres
sional action that could affect
American-Israeli relations.
The Charlotte delegation had
the good fortune to meet with
both Ninth District Congress
man Alex McMillan and U.S.
Senator Jesse Helms.
Congressman McMillan was
thanked for meeting with the
delegation and for helping,
defeat an arms deal with Jor
dan. He then heard positions
on Soviet Jewry, a proposed
arms sale to Saudi Arabia, and
school prayer. McMillan ad
mitted that persecution of
minorities in the Soviet Union
is a problem, but stated that
other groups suffer as well. On
school prayer, McMiUan says
he is staimchly in favor of
silent prayer in the classroom
and signed a resolution in
favor of it. As for selling arms
to the Saudis, McMillan pro
mised to weigh the pros and
cons very carefully before tak
ing any vote on an arms
package.
Delegates from Greensboro
and Raleigh joined in the ses
sion with Senator Helms, who
was thanked for his new found
support of Israel following his
recent trip there. Though ex
tremely impressed by what he
had seen. Helms made it clear
that he does not support any
foreign aid bills, including
ones that would help Israel.
Helms did acknowledge that
Israel is a staunch and
strategic ally in the Mideast
and suggested he would like to
find other ways of supporting
Israel, such as a NATO type
defense pact.
The conference wasn’t all
work: there was time for play.
Folk singer Mary Travers
entertained Monday night as
did the Israeli band SAFAM.
On closing day, the dele
gates heard two moving
speeches from Senator Ed
ward Kennedy (D-MA) and
Senator Joseph Biden (D-DE).
Both addressed foreign policy
and the need for foment
change. Senator Biden sum
med it up by saying certain
myths have to be dispelled,
such as Yasir Arafat can
deliver the PLO in the peace
process and the Arab states
will use oil as a strategic
weapon. Biden urged the
Jewish community, for its own
sake and the continued well
being of Israel, to reshape
American conceptions about
the Mideast.
