Page 20-THE NEWS-February, 1988 Purim Recipes POT-ROAST BRISKET WITH CARROTS On Purim it is customary to serve a “seudah”, a festive meal. This beef brisket will make an excellent main dish, accompanied by bsiked potatoes, a marinated bean salad, asparagus and sangria wine. An appetizer of traditional kreplach soup and ap ple strudel for dessert rounds out the meal. 5 lbs. beef brisket 2 medium onions, sliced 4 stalks celery, sliced 1 red pepper, sliced 8 carrots, cut into chunks V4 cup water 1 cup chili sauce 1 can light beer oil Brown meat, onions, pepper and celery in hot oil in a large Dutch oven. Add carrots, water, chili sauce and beer. Cover pot. Bring to a boil. Lower heat to simmer. Cook 2‘/2-3 hours or un til tender. Add water if necessary. Serves 8-9. HAMANTASCHEN 3 cups flour 2 tsp. baking powder Dash of salt ‘A cups sugar Vi lb. butter or margarine (add 2 tbls. Crisco for crisper kind) 3 eggs, beaten 1 tsp. vanilla Combine dry ingredients in large mixing bowl. Cut in shorten ing with pastry fork as for a pie crust; stir until crumbly. Add eggs and vanilla and mix well. Gather dough into your lightly floured hands, shaping it lightly as for a snowball. Roll out on a floured board to about 1/8 inch thick and cut into 3-inch rounds. Place teaspoon of filling, of your choice, in center and fold three sides of the circle so they meet in the middle. Pinch these edges together tightly to form closed triangle over the filling. Place on ungreased cookie sheets and bake in 350-degree oven for 20 minutes or until light brown. Gather up remaining dough, reroll and repeat. Makes 50-60. ■"HAMANTASCHEN (Cream Cheese Dough) V2 lb. butter or margarine, at room temperature 6 oz. cream cheese, at room temperature 2 cups flour Combine butter or margarine and cream cheese in mixing bowl. Add flour and stir until dough is formed. Lightly shape into flattened baU; place on sheet of waxed paper, wrap and chiU for at least 2 hours. Pinch off dough the size of a walnut and flatten with fingers on a lightly floured board to a 3-inch round. Or you can roll it out to */4-inch thickness and cut into circles. Place teaspoon of filling in the center, pinch sides together to form a triangle over the filling. Bake on greased cookie sheets in a 375-degree oven for 12-15 minutes or until lightly browned. Makes 24. GLAZED PEACH TART % cup sugar Vz cup margarine, melted 2 eggs 2‘/z cups flour V2 tsp. baking powder 2 tsps. grated lemon peel V4 tsp. nutmeg bread crumbs 1 lb. 13-oz. can sliced peaches, drained 12-oz. jar peach preserves ‘A tsp. cinnamon Combine sugsir, margarine and eggs. Add flour, baking powder and lemon peel. Mix together until a ball is formed. Reserve a quarter of a ball for top crust. Roll dough into 12-inch circle, ^2-inch thick. Place into a 12-inch tart pan and work up the sides with fingertips. Sprinkle lightly with bread crumbs Spread peaches in one layer on pastry. Mix spices with preserves, spread over peaches. Roll out reserved dough. Cut into ‘/2-inch strips. Place strips in lattice pattern over filling. Bake in a 400-degree oven for 30 minutes. All books borrowed must be signed out! The book card (in the back of each book) must be signed, phone number given, and card left on librarian’s desk. (If a book does not have a book card in it, assume it may not be bor rowed — consult librarian.) 2. Children’s books may be borrowed for one week and renewed for one additional week, either in person or by phone. 3. Adult books may be borrowed for two weeks and renewed for one additional week, either in person or by phone. 4. Reference books may only be used in the Ubrary. They are clearly meirked. 5. Current adult and chil dren’s periodicals may only be used in the library. 6. Back issues of periodiceds may be signed out for one week and one week ad ditional renewal. 7. Pamphlets and other ephemeral materials may be borrowed for one week, with one additional week renewal. 8. There is a copy machine available: 10t per copy. 9. Requests may be placed for materials already checked out. 10. Materials may be placed on “reserve” with special restrictions applied. 11. All materials must be returned to the library book drop which is located just out side the library door. 12. Responsibility for replacement of books and materials is accepted in case of damage or loss of materials borrowed. No exceptions. If all users of the library respect these rules, it will en sure the widest and best use of this wonderful new facility. Space is at a premium and thus, there is not a separate work area. Many times a stack of materials will be labeled “work in progress” or “may not be borrowed.” Please be respectful of such notations. It is very distressing to find materials missing or mis placed while they are being readied for circulation. If you have any questions, or need materials urgently, let us know. We are currently able to handle most specisil requests. Note the shelves labeled “new and exciting” for the best of Jewish best sellers. Don’t forget the Library Fund which accepts donations for simchas and memorials. Deadline for March Issue is Feb. 10! All copy must be typed and double-spaced. Burial of Books to Take Place At the Hebrew Cemetery A ritual burial of sacred Hebrew books and manu scripts wiU be held Sunday, February 14, at 1 p.m. at the Hebrew Cemetery on McCall Street. The entire community is invited to attend. The Hebrew term, “Geni- zah”, meaning “hiding place” is used to describe the place for the disposal of Hebrew books no longer physically fit for use but which can not be destroyed because they con tain the name of G-d. Accord ing to Jewish tradition, sacred Hebrew books and articles must be disposed with the same respect accorded to a human being. The Jewish community is in vited to bring their sacred Hebrew books and other ar ticles (i.e. worn out talisim and tefillin) to collection points at Temples Beth El V’Shalom and Israel prior to February 7.
