Some perfect recipes now that winter has arrived.
BEEF-BARLEY SOUP
1 lb. short ribs
2 soup bones
8 cups water
V2 cup lima beans
V2CUP barley
2 carrots, scraped & sliced
1 stalk celery, sliced
1 large onion, whole
2 potatoes, diced
salt & pepper to taste
Put short ribs, bones and water in a 4-quart pot. Bring
to a boil and skim off the top. Add the remaining ingredients.
Cover and simmer 2V2 hours.Add more salt and pepper if
desired. Can be frozen. Excellent reheated. Serves 6.
POTATO KNISHES
2 large onions, chopped
3 tablespoons butter or
pareve margarine
3 tablespoons oil
About 6 pounds baking
potatoes, peeled and cooked
until very tender
3 eggs, lightly beaten
14 cup chopped parsley
2 to 3 tablespoons cracked
black pepper
Salt to taste
Pastry dough for two
9-inch pies
Saute onions in mixture of butter and oil and set aside.
Drain potatoes and mash with sauteed onions. Add eggs,
parsley, pepper and salt, mashing well. Divide pastry dough
into 3 portions and roll each into very thin layers, about
9 inches square. Put potato mixture into center third of
pastry square, then fold another third of pastry over potato
mixture, add second layer of i^tato, then cover with last
third of pastry over potato mixture, add second layer of
potato, then cover with last third of pastry and crimp edges.
Repeat with remaining dough. Place knish whole on greased
baking pan, basting with beaten egg if desire, or cut into
slices and baste each slice separately. Bake at 350 degrees
until brown and crisp, about 20 minutes.
