SMITH’S FIRST DAY IN THE RENT OFFICE Tomato Jelly One envelope gelatine, three and one- half cups tomatoes, stalk celery, few grains cayenne, pinch salt, one-half cup cold water, one-half onion, one-half bay leaf, two cloves, two tablespoonfuls vine gar. Directions: Soak gelatine in cold water, boil other ingredients, except vinegar, ten minutes. Mix all together. Bavision Cream (A) two cups milk, (B) one-fourth box or one pound gelatine, dissolved in one-half cup water, (C) two eggs—yolks b^ten, one-half cup sugar, dash salt, (D) one cup cream, whipped very stiff, whites beaten stiff. Desserts Boiled Custard—One quart scalded milk, three eggs, one-half cup sugar, pinch of salt, one teaspoonful vanilla, grated nutmeg. Directions: Separate eggs, beat yolks, beating in sugar and salt; pour gradu ally into the scalded milk, stirring the mixture all the time, and cook in a double boiler until it coats the spoon. Remove from the fire, cool, and flavor. Have a flat pan filled with boiling wa ter, beat the whites very stiff, pour into the water, reduce the heat or with draw to the back of the stove. Cut and turn the whites until they are stiff, but not tough. Fold into the custard, sprin kle with nutmeg, and serve very cold. Baked Custard—One quart milk, five eggs, one-half cup sugar, pinch of salt, one teaspoonful vanilla, nutmeg to taste. Directions: Beat eggs slightly, adding sugar and salt; stir slowly into the milk, and pour into cups or a pan which have been dipped in cold water, and drained. Fill two-thirds full, set into a pan con taining hot water, sprinkle with the nut meg, and bake until firm. Lemon Pie—The juice and rind of one lemon. One cup sugar, one-fourth cup butter, one cup hot water, one and one- half tablespoonfuls flour, three eggs. Boil all together until thick. Use the three whites of eggs, and three table spoonfuls of sugar, for the top of pie. Crust of pie—One and one-fourth cups ilour, one-fourth cup butter, one-fourth cup lard, and a little water. ture.
