Page 6 Duke University Medical Center, InterGom ACCOLADE to the Tray Unit of the Dietetic Department Ruth Suitt, dietary tray maid, briiifrs the warmth of friendly, thourhtt'ul care to a jol) she enjoys—deliverinfj food to patients. Shown here at the bedside of William L. Saul, Kiith Snitt tyjnfies an important phase of patient care in the Medical Center. The tray luiit of the Dietetic Department is responsible for serving food to over 500 patients three times daily in addition to the many supplementary feedings between meals. This unit coordinates several phases of dietary therapy between the nursing, medical and dietary staff. To ])re])are and serve food to our patients requires the attention of many hospital employees. There are the dietitian who sees the patient and j)lans a menu, the cooks who prepare the food, and those who coordinate the move ment of trays as they go upward to patient areas. After the patients hav‘ been fed, the cleanup procedure begins in the j>atient area and ends in the kitchen with washing the dishes. All members of the dietary team are working toward the same goal—to plan menus and serve meals that will be attractive to the patients and meet their nutritional needs.
