Daniel Bruce Souther, a stu dent at Wilkes Community Col lege, had his ri^t eye removed at Baptist Hospital in Winston- Food Management A group of dieticians and staff from surrounding school lunch rooms have completed a course in. Quality Productim Management sponsored by Wilkes Community College. J(4in Idol, Dean of Student Per sonnel, congratulated the partici pants and presented them with diplomas commorating their ac complishment at C.C. WrightEl- ementary School Wednesday in a ceremony after which all were served with food that was pre pared as part of the course. Mrs. Nancy G, Triplett, in structor in the course and Mrs. Mary H, Nelson, Area Consultant in Hospitality Education for the college i iexplained that this course is for food service personnel with experience in methods of quant ity food preparation to retain nutritive values; use of stand ardized recipes; use of weights and measures; use and care of equipment; timing, selection, preparation, and service of food for the school lunch. It is part of a curriculum of School Food Service Management which was devel(«)ed by and offered in co- (^eration with the School Food Service Division of the North Carolina State Department of Public Instruction. Mrs. Nelson stated that three of the participants in the class are now eligible to receiye their full diploma for the 120-hour course. These are Mrs. Pearl M. Par- lier of Wilkes Central, Mrs. Eliz abeth Foster of Wilkesb o r o Sch ool, and Mrs. Phyllis Mathis of C.C. Wright. Others receiving diplomas were Mrs. Grace Triplett of Mt, Pleasant School, Mrs. Eula Ben ton of Wilkes Central, Mrs. Dov- ie Chipman of Wilkes Central, Mrs. Grace Hall of Fairplains School, and Mrs. Estelle White of Mountain View.
