Parsnips are not a vegetable that I eat often, but 1 felt it would be interesting to learn how to cook differ ent vegetables than the same ones I eat all the time. As a vegetarian I find that it is important to eat as many vegeta bles as possible and to eat a wide variety of them. What health benefits are found in pars nips? They are rich in vitamins and minerals, such as Potas sium, copper, manganese, iron and calcium. Also they are a good source of dietary fiber. Vitamin C, folic acid, B-vitamins, Vitamin K and E. Roasted parsnips is one dish that is popular during Christmas in most English speaking countries and if you have never cooked them before, then perhaps think about cooking something new. Creamy Parsnip Soup Serves 4; Prep time 20 minutes with total time 50 minutes. Ingredients — 2 tablespoons butter -1 pound prepared sliced leeks (2 - cups) — 1 pound parsnips, trimmed, peeled, and cut crosswise into i-inch pieces — 2 apples, peeled, cored, and cut into i-inch pieces 1 medium baking potato (about 1/2. pound), ■ peeled and cut into i-inch pieces -1 can (14.5 ounces) veg etarian broth —1/2 cup heavy' cream — Salt and pepper Heat butter in a large pot over medium heat. Add leeks (reserving 1/2 cup for garnish). Cook, stirring, 5 minutes: Add parsnips, apples, potato, broth, and 4 cups water. Bring to a boil; reduce heat and simmer, partially cov ered, until vegetables are tender, 20 to 25 minutes. Working in batches, puree soup in a blender until smooth. Return it to pot; stir in cream. Season with salt and pepper. Serve with Leek Garnish. To make leek garnish, in a large skillet, heat 1 tablespoon butter over medium- high.
