A conch is unfamiliar territory to many of us so we have both read and asked. First, getting the conch out of its shell: you can crack the shell with a hammer. (Our best source said that you never attempt to boil it in the shell or it would be tougher than rubber.) You can also freeze the conch and when you thaw it you pull the meat gently from the shell. Remove the fleshy foot, discard the viscera and remove the homy covering by slipping a knife under it and pulling it off. Then, says our local advisor, clean the foot thoroughly, split the meat lengthwise, and pound it with a wooden mallet. Cook in a pressure cooker with onions and potatoes, add commeal dumplings, and you will have a rich, tasty stew. Any other recipes? PKS Mayor Joan Lamson and other officials are exploring the possibility that PKS could get some of the sand that will become available in 2005 when the outer harbor channel is dredged. That could provide sand of better quality to be placed on the PKS beach. “It is quite possible,” says the mayor, “that we could windup in a better position. If we’re going to make an investment in this, we should make it right.” The mayor points out that a wide, well- nourished beach is critical to the protection of property and the health of tourism in the region. She says the Corps of Engineers should fully investigate all the circumstances sur rounding the current problems. She and other local officials believe such an assessment could lead to better future management of sand resources. The head of the Corps in this district has promised to get to the bottom of the situation. Local officials are also exploring the ques tion of what happens to the $3 million in federal funds allocated for the PKS portion of the pump-out project. The federal funds represent 65 percent of the cost, with the lions’ share of the remainder to come from the state. Craven Messiah Chorus The Craven Messiah Chorus will perform G. F. Ha’ndel’s most famous oratorio on Jan. 9 and 10 2005 in the Sanctuary of Centenary United Methodist Church, on the comer of New and Middle Streets in New Bem. An open rehearsal will be held on Jan. 9 at 3:00 p. m, and performances are 7:30 pm, Jan. 9 and 4:30 and 7:30 pm, on Jan. 10. Cost is $12.50 for the open rehearsal and $15.00 for the performances.
