‘n’ Bites

This time of year everyone is busy and yet we have to manage some time to
bake Christmas cookies. I went through my cookie file and decided everyone
needs some good but easy cookies that...well...will look fairly nice. Here are a
few.
Angel Maccaroons Makes 2 1/2 dozen
parchment paper
1 package (16 oz.) one-step angel food cake mix
1/2 cup water
1 1/2 tsp. almond extract
2 cups flaked coconut
In mixing bowl, beat cake mix, water and extract on low speed for 30 seconds.
Scrape bowl, then beat on medium speed for one minute. Fold in coconut.
Drop by rounded teaspoonfuls onto parchment paper-lined baking sheet.
Bake at 350 degrees for 10-12 minutes or until set. Remove paper with cookies
to a wire rack to cool. When cool, remove from paper.
Note: You can tint part or all with festive colors when folding in coconut.
Vanilla Wafers Makes 3 dozen
1 cup butter, softened
1/2 cup sugar
1 egg
2 1/2 cups flour
1 tablespoon vanailla extract

Preheat oven to 425 degrees.
Cream butter and sugar together until fluffy. Add egg. Mix well. Add flour and
vanilla.
Shape dough into two large rolls by rolling in waxed paper. Unroll waxed
paper and put in colored sugar, nonpariels, etc., then re-roll dough so that roll is
coated. Put in refrigerator until very cold. Remove waxed paper and slice with
sharp knife into _ inch slices. Place on greased cookie sheets. Bake about 8
minutes or until lightly browned.
Note: Dough can also be packed into a cookie press.

3 1/4 cup chopped blanched almonds
2 2/3 cup sifted flour
1/2 teaspoon salt
48 whole, unblanched almonds
Glazed Almond Cookies
1 cup butter
1 cup sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
2 eggs, separated
Cream butter, sugar, flavorings and egg yolks (one at a time). Beat until light.
Add nuts, sifted flour and salt. Mix well. Roll into balls about 2 inch in diam
eter. Dip in unbeaten egg whites. Place 2 inches apart on greased cookie sheets.
Flatten each ball by pressing a whole almond into center, making a depression.
Bake at 350 degrees about 10 minutes. Note: Filberts may be used if desired.
Broccoli Salad
1 bunch broccoli, cut up
1/4 c. raisins (or more)
1 med. onion (OR several spring onions with tops), chopped
1 can water chestnuts
8 Tbls. crumbled bacon
1/4 c. sugar
3 Tbls. vinegar
1 c. mayonnaise
Combine all ingredients, except bacon, and mix well. Chill at lease one hour.
Add bacon just before serving.

Baked Ziti
1 26 oz. bottle roasted garlic flavor tomato sauce (preferably Classico)
1 lb. package hot sausage (Neese’s)
8 oz. box Ziti
6 oz. shredded Mozzarella Cheese (or more to taste)
Fresh Parmesan
Brown sausage in a nonstick skillet. Drain excess fat well. Add sauce to sau
sage and mix. Cook Ziti according to package directions. Cover the bottom of a
2 qt. baking dish with a very thin layer of sauce. Add a layer of Ziti. Top with a
layer of mozzarella. Continue layers to fill the dish, ending with the cheese.
Bake for 30 minutes. Sprinkle with Parmesan. Bake 15 minutes longer. Recipe
can be doubled.
