a freezer package that seems to do an exceUent job of preserving the quality of the
crab meat. In a freezer it will stay close to fresh-picked quality for much longer
periods of time than you would expect. Sorted-out, big and full jimmies can yie a
half pound of crab meat in just five crabs. There is an especially good flavor to this
jimmie meat as weU. Many great adventures have been enjoyed with such carrier
bonanza” dip netting—and there is plenty of work involved, too. Sorted ^abs need
to be steamed, then the shells, entrails and legs removed and discarded. The claws
and bodies then must be picked. This can be a lonely task, but if shared, it is a nice
way to have time to solve the problems
of the world. The tips of the claws can be
cracked into great appetizer feasts. The rest
of the claw has a nice chunk of meat in it
which has a flavor of its own. Many recipes
provide succulent ways to use crab meat
in salads, soups, sandwiches, dips, gratins
and crab cakes. The accompanying photo
of cooked jimmies on a 2 by 8 board shows
them to be about eight inches from tip to
tip—and they were slam full of meat.
On the hunting side of things, be
reminded that the Town of Pine Knoll
Shores has an ordinance that makes it illegal
to discharge a firearm within the town or
within 2,500 feet of the ocean beach or
sound shores. Duck seasons will have begun
in mid-September, so please remember this
limit to stay out of trouble if you plan to
