There’s a recipe for New Bern clam chowder included in "Seafood Cookery In North Car olina.’’ The booklet was pub lished jointly by the State De partment of Conservation and Development and the Agricul tural Extension Service at State College. The recipe calls for three medium-sized potatoes, chop ped; one quart of boiling water; one quart of clams chopped; one No. 2 can of tomatoes; three or four slices of salt pork; twoonlons, chopped; Wor cestershire sauce; s^t and pep per. Season with one to two tablespoons of Worcester shire sauce. Season to taste. We hate to be disloyal to anything that carries a New Bern label, but deliver us from anybody’s clam chowder that Is ruined by adding tomatoes. We’ll gladly settle for this re cipe—Carterey County clam chowder, also in the booklet. You’ll need one quart of clams, chopped; two medium sized potatoes, cubed; one medium-sized onion, choked; one quart of water; salt and pei^er; one-fourth pound of salf pork, cut in small cubes. Corn meal dumplings are suggested too, but why add them? Fry pork until crisp and brown. Add potatoes, onions, clams and water. Simmer until potatoes are done, adding water to keep mixture from becoming too dry. Season to taste with salt and pepper. Cover tightly and simmer for fifteen minutes. Among those who read It was Mrs. Kate B. Griffin of Route 1, Rose Hill. With Preston’s permission, we’ll quote from the letter she wrote him as a result. "I know you think I have forgotten you,’’ she penned. "I saw In the News and Observer that you had been named Police Chief. Congrat ulations! "I did not know what had become of you, so when I saw this I decided I’d write and let you know 1 still think of you as my sweet little first grader 46 years ago. "There have been many changes since that time. I am an old gray haired woman now, but have been blessed with fairly good health, and I am active for my age. "I have been a widow nearly five years, and have four sons and twodaughters—all away ex cept one son at home with me. I pass through Cove City some times, but all the faces I see are strange to me. I did see Alfonso Hardison’s mother not long ago, and she had changed as much as 1 have. "If you have time, I surely would appreciate hearing from you, and knowing how life has been with you over the years.
