IT'S TURKEY TIME Today's Turkeys — Turkeys are available as fresh chilled, frozen and partially or fully prepared. The whole bird, In a variety of sizes is still the most usual way to buy turkey, but boneless turkey rolls are In creasing In popularity. Very few markets handle fresh turkeys these days, since freezing makes it possible to maintain quality over long per iods of time. The freezing pro cess has made turkeys a year- round meat. Frozen turkeys could prop erly be referred to as “fresh- frozen" because processors retain freshness by chillingand freezing the birds imme^ately after slaughter. After freezing if turkeys are kept In ade quate frozen storage for a rea sonable length of time, they should reach you with all their original freshness. Bargains in Large Sizes— Large whole of half turkeys are better buys than small ones for two reasons: 1. you pay less per pound for large ones than you do for small ones and 2. iarge ones have a higher pro portion of meat to bone than small ones. Turkeys that weigh 10 pounds or more provide two (3 to 4 ounce) servings to the pound. If you buy a turkey that weighs less than 10 pounds, allow three- fourths pound ready to cook weight for each serving. Boneless turkey rolls have no bone loss, but the uncooked ones shrink In cooking. They are very convenient to use, but usually are more expensive than whole turkeys. Some peo ple feel that the presence of the bone during cooking of whole turkeys Improves flavor. Here are some ideas from the Poultry and Egg National Board that will guide you In handling your fresh-frozenhol- iday turkey from the moment you buy It. IF YOU COOK IT IMMEDIATELY 1. Remove wrap. Place froz en turkey on rack In shallow roasting pan. 2. Cook for 1 hour in pre heated 325 degree F. oven. 3. Take turkey from oven and remove neck and giblets from body cavity and wishbone area. 4. Immediately return tur key to oven and cook until done. IF YOU EXPECT TO COOK IT LATER THE SAME DAY 1. Leave turkey In origin al wrap. 2. Thaw in running water or water that Is changed frequent ly- THAWING TIME Five to 9 pounds,3to4hours; over 9 pounds, 4 to 7 hours. 3. Cook or refrigerate thaw ed turkey Immediately. IF YOU COOK IT THE NEXT DAY 1. Leave it in original wrap. 2. Place frozen turkey In brown paper bag or wrap In 2 or 3 layers of newspaper. 3. Thaw at room tempera ture. THAWING TIME Under 12 pounds, 10 to 18 hours; over 12 pounds, 18 to 30 hours. Check turkey often during last hours of thawing and refri gerate Immediately If com pletely thawed. IF YOU EXPECT TO COOK IT TWO DAYS LATER 1. Leave In original wrap per and place on tray or drip pan. 2. Thaw in refrigerator. (Turkeys over 12 pounds may take up to 3 days.) DO NOT allow thawed bird to stand at room temperature. (Refrigerate thawed turkey or cook Immediately.) DO NO stuff bird until ready to cook DO NOT thaw commercially stuffed birds.
