Or a day may turn out cloudy when you wanted to picture a sunlit subject. Good photography means advance planning — to make the light, weather, sunny or cloudy skies work for you. Outdoor portraits, for instance, are best taken under a hazy or overcast sky. Not only do people squint in strong sunlight, but the glare washes out character. Textured surfaces like brick or stone walls look flat and uninteresting most of the day. Only in the morning or late in the day will strong side lighting bring out the interesting textures dramatically. The recipes that follow have been specially planned to take advantage of shortcut methods and the common convenience foods--the kind you may very well always keep in stock-to help you pt leftovers to the table easily and with good reason to be proud of the new dishes you have made from them. DISHES YOU CAN MAKE WITH LEFTOVER MEAT, POULTRY, OR FISH Macaroni and Cheese PIus- Prepare one package macaroni with cheese-sauce mix as directed on label. Add pieces of ham loaf lightly browned in a little butter or margarine. (Bits of leftover peas, carrots or green beans can be added too.) Quick Pasta-Add crumbled leftover meat loaf or coarsely chopped cooked meat to canned spaghetti sauce and simmer a few minutes. Serve on hot cooked spaghetti, macaroni or noodles. Beef Stew-Dice leftover pot roast and add leftover or canned gravy, canned whole onions, carrots, drained potatoes and a few cooked peas. Heat, then simmer a few minutes. Beef Shepherd’s Pie-Mix diced cooked beef with leftover, canned or packaged gravy. Heat with cooked peas, carrots or green beans and pour into casserole. Make a ring of seasoned instant mashed potatoes around edge of dish and bake in hot oven (400 degrees F.) 20 minutes, or until heated and bubbly. Potato-topped Meat Pie-Add a little grated cheese to prepared instant mashed potatoes. Spoon onto diced leftover cooked meat, gravy and vegetables in casserole. Pour a little melted butter over top and sprinkle with a few dry bread crumbs mixed with a little grated cheese. Turkey or Chicken Yellow Rice-Prepare one package yellow rice mix as directed on label. Add diced leftover cooked turkey or chicken, a few cooked peas and some chopped pimiento. Let stand over low heat until hot. Chicken or Turkey and Rice- Prepare one package (7 ounces) chicken-flavored rice mix as directed on label, using 2 cups water. Add diced leftover cooked chicken or turkey to water while bringing to boil. Add rice and proceed as directed. Sprinkle with dried parsley and paprika. Creole Fish Soup-To canned tomato soup, add a little instant minced onion, and chopped green pepper to taste. Skillet Potatoes au Gratin- Follow directions on label of one package (5Vfe ounces) au gratin potato mix, but put ingredients in 10” skUIet. Add bits of leftover cooked ham. Cover and simmer 30 minutes, or until potatoes are tender. Sprinkle with chopped parsley. Makes 4 to 6 servings. Stuffed Baked Potatoes- Bake potatoes, scoop out pulp and reserve shells. MasJi pulp and add bits of leftover cooked beef, ham, pork or bacon. Add a little milk, and salt and pepper to taste. Pile in shells and bake iii hot oven (425 degrees F.) until lightly browned and heated. Scrambled Eggs Plus-Add any bits of sausage, chicken liver, ham, poultry, seafood, cheese, olives, chopped green onion or parsley to scrambled eggs. Macaroni Salad-Add almost any leftover cooked meat (or vegetables) to cold cooked macaroni. Moisten with mayonnaise and add seasonings to taste. Ham and Baked-bean Sandwiches-Toast bread and top with small slices of leftover ham. Spread with a little prepared mustard and top with baked beans, half a slice of process cheese and half a slice bacon. Broil until bacon is crisp and beans are heated. Barbecue Sandwiches-Chop Leftover cooked beef, pork, chicken or turkey. Add bottled barbecue sauce, heat and serve on toasted hamburger rolls.
