Store Potatoes In Ventilated Place Its not the growing of Irish potatoes that seems to give Tar Heel garden ers the most trouble. Successfully storing the popular root crop is the hard part. Here are some sugges tions: Dig and remove potatoes from the garden early in the day to avoid field heat. Don’t expose potatoes to the sun for any length of time. Place potatoes in well ventilated containers, such as half-bushel slatted baskets. Store baskets in an area out of the sun where the temperature will be between 60 and 80 degrees. Make sure the potatoes have plenty of ventilation, and leave them to cure for four days. For permanent stor age, move potatoes to a cooler place, a range of 45 to 50 degrees would be ideal. Provide constant ventilation and screen the area to keep out insects. Don’t place potatoes where' they will be exposed to artificial light for extended periods. Don’t store this year’s potatoes where last year’s crop was stored unless it is thoroughly cleaned.
