Baking Fruit Cake For The Holidays, By MISS VA. BLOUNT Home Service Director of The Va Electric & Power Company Practically all the plans we are making now hinge in someway upon the coming of Christmas. We are budgeting our time and our tasks into the “be/ore and after” tasks. There are those things which must be accomplish ed before Christmas comes and the less urgent must wait until the holiday season is over. The propejr Christmas spirit grad - ually comes as we begin these happy plans, even through they are busy days. Most families are old fashioned when it comes to Christmas prep arations, especially if there are children to come home for the holidays. We cook our way into the ho idays and we eat our way out. To avoid the last minutes rush in baking, lets bake our fruit cakes early. They mellow with age especialy if soaked in wine until tty? appointed date. Fruit Cake (Dark) 1 lb. butter (1-2 cup) 1 lb. biown sugar (2-3 c.) 1 lb. flour <1 c.) 9 eggs (2) 2 t. cinnamon (1-4 t ) 1-2 t. cloves (1-8 t.) 1 t. mace, (1-4 t.) 2 T. Milk (2 t.) 1 t. sode (1-4 t.) 2 lbs. raisins (3-4 lb.) 2 lbs. currants (1-2 lb.) 1-2 lb. citron (1-8 lb.) 1 lb. candied cherries (5 oz.) 1 lb. shelled almonds (1-4 lb.) 1 lb. shelled pecans (1-4 lb ) 2 T. vanilla (2 t.) 1-2 lb. candied orange peel (1-9 lb.) 4 T. lemon juice (1 T.) 1 t. baking powder (1-8 t.) Candied pineapple; may be sub tituted for orange peel. Blanch almond and heat them in an oven until a delicate brown. Cut fruit and nuts into small pieces, melt butter and add sugar; mix to gether until thoroughly blended. Add well beaten eggs. Dredge mixed fruit withflour . Sift to - gether remaining flour, soda, spic es and salt. To the cake batter add dry ingredients and milk alter - nately. Add nutsand fruit. Mix thoroughly. Line pan with waxed paper and fill 3-4 full of cake mixture. Bake 4 hours in an oven which is slow (300 deg. F or below.) Note—Small recipe makes 2 pound fruit cake. Use quantities give,n in parenthesis in recipe. Store fruit cake in a tin box and pour wine over it every 3 or 4 days. If it becomes too moist at the bottom, turn cake over once every 2 or 3 weeks. White Fruit Cake 3-4 c. butter 2 c. sugar 1 c. chopped raisins 1 c. finely chopped candied orange peel 1 c. sliced candied cherries 2 or 3 c. blanched almonds (sliced lengthwise.) 4 t. baking powder 4 ^gg whites 1 c. fresh grated cocoanut 2 c. Caskey who exhibited the 'hampion at Cleveland. 1-4 t. salt 1-2 e flavoring Cream butter, add sugar grad ually. Sift all dry ingredients. Add dry ingredients and milk. Beat or stir batter only enough to make it smooth, add flavoring. Fold in stiffly beaten eggs whites and finally fruits and nuts. I’ilgHm Fruit Cake A light fruit cake, neither too expensive nor too rich, with an unusual elusive flavor, is always ajoy during the holidays. Cream one half a cup of butter, add grad ually while still beating one cup of sugar and two well beaten eggs. Mix and sift one cup and a half of flour, 2 t. baking powder and 1-2 t. salt. Add the dry ingred - ients to butter mixture alternat edly with three-eighths cup of milk. Add the milk carefully and if the batter seems stiff, add one more tbs. mi k. Add the grated rind of 1 lemon and 2 t. of al mond extract. Then fold in the following fruits: 1-2 c. citron, thin ly sliced and cut in pieces; 1-2 e. almonds, blanched and shredded and 1-4 e. candied orange peel. Bake, as a loaf in a well-buttered tin about 8 inches by 4 inches by ) inches at 325 deg. F for 55 GO m nut s. mH Negroes Smash Into Car On Jackson St. William Drumgold and Bob Sims, both colored, ran into plen ty of trouble when they ran into Kelly Lynch's car on Jackson St. Monday night. They ruimd Mr. Lynch’s car, hitting it broadside at a street in tersection. Drumgold, driving the other car, was arrested after ! throwing some liquor out of the car. Sims made a getaway and has not been caught. Charging that her husband would not let her vote Mrs. Cora G. Thrismer of Eaton O., filed suit for a divorce from Charles J. . Thrismer. Duke Alumni Hears Bradway At Dinner The Halifax-Northainpton Alum ni of Duke University ce ebrated Duke University Day with a din ner at Weldon Monday evening, December 10th at 7:00 o’clock. The d nner was served in the high school library. Professor J. N. Bradway, of the School of Law at Duke was the gu st speaker Memorial Services For Dr. Wright Sun. Greenvil'e, N. C., Dee. 13th. — Plans are completed for the Me morial Services for the late Dr. Robert II. Wright, who died last spring just a few weeks before he would have completed his twenty-fifth year sapresident of East Carolina Teachers College. The services will be, held on Sun day afternoon, December 16th., at three o’clock, in the Social-Relig ious Building, called the Campus. Building. Dr. Frank Graham, president of the University, will be the, only speaker. There will be special music by the college girls, under the direction of Miss Kuykendall, teacher of Public School MuSic. An old “drunk driving” statute was invoked by a justice court in Elko, Nev., when Joe Segura was fined $50 for riding a horse on the city streets while intoxicat ed.
