“Sweetie Pie” And Other Ways To Cook A Chicken MISS VIRGINIA BLOUNT HOME SERVICE DEPARTMENT VA. ELECTRIC& POWER CO. ■-o Individual Chicken Pies Plain pastry, 1 c. Sliced mush rooms, 4 T. fat, 6 T. Flour, 3 c. chicken stock, 3 c. cooked chiken, cut small. Few grains pepper, one half t. salt. Line individual pie pans with pastry. Set another pan on top of the pastry to hold it in shap, Bake in a hot oven (425 deg. F) about 10 minutes. Remove the top pan and bake about 5 minutes longer. Brown mushrooms in fat, add flour and stir until well mixed. Add chicken stock and bring to the boiling point, stirring con stantly until thick . Add chicken and season to taste with salt and pepper. Fill the baked pastry shells with the chicken mixture. Cover the tops with pastry. Bake the pies in a hot oven (425 deg. F.) about 10 min. or until top is brown ed. Serve immediately. Makes 6 to 8 pies. (Suggestion: Serve wit buttered artichoke hearts, cran berry or currant jelly, celery and coffee mousse.) Curried Chicken Souffle 4 T. fat, 2 c. ctok chicken, cut fine, 2 c. milk, 2 T. flour, 1 t. salt, Few grains pepper. 1 t. Curry powder, 3 egg yolks, 3 egg whites. Heat fat, add flour, salt, pepper and curry powder. Add milk, Cook ntil thick, striring constant ly. Add chicken and mix thorough ly. Pour this mixture over the beaten egg yolks and mix well. Cool slightly. Fold in the stiffly beaten egg whites. Pour into a greased cassrole. Bake in a mod-| erate oven (325 deg. F.) 1 hour or until set. Serve immediately. Chicken Chow Mein Two-thiirds c. shredded onion, 4 T. fat, 2 c. celery, cut in pieces, 2 c. cooked chicken, cut in pieces, Chinese fried noodles, 1 one- half c. chicken stock, 2 c. bean sprouts, 1 t. Chinese brown sauce, 2 T. Chinese soy sauce, 3 T. cornstarch. Cook the onion in the fat until a delicate brown. Add celery, and cook a few minutes longer. Add the chicken, chicken stock, bean sprouts, brown suace and soy sauce. (Chinese ingredients may be bought at Chinese or fancy gro cery stores, or order by mail). Cook about 10 minutes. Add the cornstarch, mixed to a smooth paste with a little cold water, and stir until thickened. Heat the noodles. This contest, which is sponsored by the Agricultural Development Bureau of a large distributor of American nitrate of soda, provides for 338 cash prizes. These awards range from the substantial first prize of $1,000 to $5.00. An interesting feature of the con test is the calibre of the men who ore to act as honorary judges. They are: Senator Ellison D. Smith, Chairman of the Senate Committee on Agriculture; the Hon. Allen J. Ellender, Speaker of the Louisiana House; and Dr. B. W. Kilgore of Raleigh, N. C., for mer director of the North Carolina Experiment Station and Extension Service. Since the prizes are to be based on the answers to five simple ques tions, with spelling and grammar not counting, the sponsors of the contest feel that every farmer who follows the rules will have an equal chance, regardless of the size of his farm or the fertility of his land.
