RECIPES OF THE WEEK BY MISS BLOUNT i — By VIRGINIA BLOUNT Home Economist Virginia Electric and Power Co. I Now is the time tor all fair Americans to share and share a like! Let us all take part willing ly in the government’s Share-the Meat program. It’s just another way to help on the home front. To help the country supply huge amounts of meat for the Army, the Navy, and our fighting Allies, Uncle Sam is requesting that we limit our meat eating to 2% lbs. per person per week. This applies to meats on the "restricted” list. Others, of which there are plenty, are on a "non-restricted” list and from this list we may eat all we want. Non-Restricted Meats Liver Sausage, Liver, Tongue, Heart, Kidneys, Sweetbreads, Tripe, I Brains, Meat from the head, tails and feet such as pork feet, bacon squares, oxtails, etc., products made from any meats on this list, also poultry and fish. Here are some favorite recipes for non-restricted meats. Try them and you can know you are patriot ically helping with this major gov ernment project. JUl V JUH, L/UAjT 1 lb. fresh sliced liver 3 sprigs parsley | Vi c. milk 2 tsp. Worcestershire Sauce 1 onion 2 eggs 1 tsp. vinegar 2 tsp. salt 2 c. cooked potatoes or rice Simmer liver in small amount of water until firm. Grind it through a food chopper with the onion and parsley. Mix with oth er ingredients and turn into greased baking dish. Top with a strip of bacon. Bake 400° for 45 min. LIVER PASTE FOR SANDWICHES 1 c. ground liver I 2 tbsp. Chili Sauce 2 tbsp. minced celery 2 tbsp. butter Salt — pepper 2 tbsp. minced parsley Broil slices of liver or simmer whole pieces until tender, then mash or grind it. Mix thoroughly with seasonings. KIDNEY IN CREOLE SAUCE 1 Beef or 4 Veal Kidneys 3 tbsp. flour 3 tbsp. shortening V* c. onion minced Salt — pepper II c. canned tomatoes Trim kidney and cut into % [ inch slices, cover with boiling wa ter for 5 min. Drain — dredge with flour and brown in hot fat. Season. Add tomatoes and sim mer for 30 min. Note: 2 cups water and 1 cup diced potatoes may be substituted for the 1 cup tomatoes or 2 cups tomato juice and % cup rice. BRAISED HEART t 3 strips bacon, chipped | 1 c. bread crumbs Heart (beef or veal) Vi c. minced onion Salt — pepper Flour Wash heart — remove any hard parts. Brown bacon, mix with bread and seasonings. Fill cavity in heart with stuffing and sew opening. Roll in flour and brown quickly in skillet. Add Vi cup water and simftier until tender. (1% to 2 hours.) Hearts may be placed in oven at 300° in covered pan, add additional water if ne cessary. NOTI CT ■ — The undersigned, having qualified as administrator of the Estate of S T. Ket-RP'r-1-28-43 New Year’s Eve Services At The Catholic Church New Year’s Eve, Thursday, De cember 31, will be observed at St. John’s Catholic Church by the Holy Hour, which will begin at 7:30 p. m. This impressive ser vice will be featured by the Ex position of the Holy Eucharist; congregational singing and pray ing; acts of adoration, thanksgiv ing, reparation and petition; a touching Memorial Service for our beloved deceased, and Benediction of the Blessed Sacrament. The sermon theme will be “Taking Spiritual Inventory.” Holy Mass will be offered on New Year’s Day at 7 a. m., to celebrate the feast of the Circum ■■■BB cision of our Savior. As this par ticular Friday is a holy day of obligation, the law of abstinence ceases. On Saturday morning at 8 o’clock Mass will be said for the children. The annual report will be made at both Masses on Sunday, Jan uary 3, at 8 and at 10 a. m. Father Peter M. Denges wel comes everybody at all times to the Catholic Church.
