PAGE EIGHT FoodhantHers School Is Designed To Solve SanitationJ*roWems Necessary to Apply and Understand Scienti fic Knowledge As an official agency charged with the responsibility of protecting and promoting the public health, the P.ts quotank-Perqui m ans-Camden - Chowan District Health Department is at tempting to discharge its responsibili ty by developing a program planned with the people and designed to meet their needs. Cooperative planning to be effective in problem solving must be based on public understanding fol lowed with individual group participa tion. Increasing numbers of .people eating out, together with the rapid turnover of foodhandling personnel, is making the problem of adequate pro- , teotion for the public more acute and complex. i The District Health Department’s staff felt that as a public health agen cy they had a greater responsibility in : alleviating the problem than lust the : routine sanitary inspection of public 1 eating places. Obviously s he para- < mount need is for foodhandlers to un- : derstand and to be able to apply the i scientific knowledge available on the ; various means of transmission of di- ] sease in public eating places. This need could be met only through team- i work among the Health Department, s management, and employees. Lack of • participation on the part of anyone < would affect the efforts of the others. The Health Department could provide the technical information and with the ] help of the other two groups could i better protect the public’s 'health ] through the continuous application of this knowledge. Management could improve the appearance and services of foodhandling establishments by uti lizing the assistance and guidance of- 1 sered by the Health Department. The foodhandler through this co operative effort develops a sense of personal responsibility as he learns and understands the basic rules of < health and sanitation necessary for the safeguarding of his own health and the health of whom he serves. Chickens, Eggs Head Food List Miss Rebecca Colwell Points Out Plenti ful Foods Broilers and fryers, eggs, and dried beans and peas are “February Firsts” on the U. S. Department of Agricul ture’s monthly list of foods plentiful on Southern markets, Miss Rebecca Colwell, home demonstration agent for the State College Extension Ser vice, said this week. More broilers and fryers are being sold now than last year, she explain ed, and USD A statistics indicate mar ketings should stay above last year from now until March 1. Warmer weather, larger laying flocks, and in creased egg production per hen are the main factors in the. egg supply in crease expected in February. Last season’s dried bean production was a record, and stocks of most dried peas are ample for all consumer de mands, Miss Colwell said. Fresh vege tables for the month —beets, cabbage, carrots, lettuce, spinach, and especi ally spring greens-—will be plentiful on Southern markets in February, she added. Canned and frozen com are listed as the best buy in canned foods. Tree nuts —mainly almonds, wal nuts, and filberts—are plentiful, and as for fruits, Miss Colwell said, best supplies would be found in apples, oranges, winter pears, cranberries, raisins, and dried prunes. Additional foods on the February plentiful foods list, the home agent said, are turkeys, pork and pork products, manufactured dairy prod ucts, and frozen fish.
