PAGE TWO Freezing Foods For Home Discussed I By Home Agent Timely Questions Are Answered By Miss Colwell The freezer locker plant and the home freezer are two different things, ' says Miss Rebecca Colwell, Chowan County home agent. One does not take the place of the other. They complement each other and, when used together, make an ideal set-up for a family to have the proper facilities for using frozen foods. The locker plant has facilities for chilling meat at proper tempera tures that cannot well be done at home, and skilled people to do the handling, packaging, and freezing jobs. Get acquainted with the many services your locker plant offers. The home freezer makes frozen foods available at arm’s reach. The unit should be used for the purpose it is designed. When you buy a home unit, get information from the manu facturer about how to use it. Some units are designed for freezing foods. Some are designed for holding food that has already been frozen. Keep a variety of food in the home freezer instead of larger quantities of a few things. Use the locker plant to freeze heavy freezing loads, to store the bulk of the frozen food, and to chill and process meats, Use the home freezer to freeze small quantities of food, to keep a variety of frozen foods at arm’s reach, and to freeze cooked foods for special occasions. Never overload the home freezer with un frozen food. Watch temperatures. Hold foods at zero degrees. Miss Colwell presents a few an swers to frozen food questions that have been asked recently: 1. What about milk cartons for frozen foods? * Milk cartons were not designed to hold food at zero temperature. They are not highly moisture-vapor resist ant. Use them for milk. Use con tainers for frozen foods that were made for the purpose—or the canning tin can. 2. What about using old stockings to protect the packaging material in stead of stockinnette ? Just plain “no”. 3. What about freezing and storing icc cubes in the home freezer? Ice cubes, in most cases, will freeze faster in a household refrigerator. If they are frozen or stored in the home! freezer, it is best to put them in aj container. The ice cube tray can be 1 slipped into a freezing film bag. If left open either for freezing or storing, more frost will collect, in the freezer and defrosting will have to be done more often. 4. What about keeping a pitcher of water in the freezer so the family can have cold water without its stay ing long enough at a time to freeze? It is not the best use of freezer space, but if-one wants to do it any way, it should be put in a container with a tight fitting top. What is a Frozen Food Relationship meeting? It is a meeting of people from all business places and the professional organizations that give frozen food information to the people in the coun ty. This usually includes people from Extension, locker plants, home freez er" dealers, power and light companies, Rural Electrification, home economics and agriculture teachers of Veterans, and many others. 6. What is the good of this type meeting? It builds a foundation in the coun ty upon which to work and should make it easier to promote a stronger frozen food program in the county. Cooked meats and other foods may be frozen satisfactorily if packaged and frozen properly. If air is not suf ficiently pressed out of package, and moisture-vapor proof packaging ma terial used the food will not be of good quality in flavor, texture, and color. The Home Agent will be glad to furnish information on the best va rieties of fruits and vegetables, hand ling, scalding and cooling, packaging, and preparation of different foods for freezing. It is often cheaper to have food packaged in a locker plant than at home because- they buy packaging materials at wholesale price. Corn Ear Worm Control Successful Sweet corn ear worm control demon strations conducted this season have resulted in good control of the pests, particularly where the dusting pro gram was started in time, says Coun ty Agent C. W. Overman. While 100 per cent control of ear worms in the very tips of the ears was not realized, there was very good control for ear worm damage. ENGAGEMENT ANNOUNCED Mr. and Mrs. George A.
