I have found that freezing is one
of the favorite methods of conserving
fruits and vegetables used by many
of you in the county. A number of
you have asked for information re
garding ascorbic acid. This is an anti
browning agent used to prevent dark
ening of apples, sweet cherries, light
figs and peaches. Ascorbic acid is
actually Vitamin C. As you know,
that is a food element that we need
every day. Our- bodies do not store
it, so we have to have a new supply
daily. We get it from oranges, can
taloupe, green peppers, tomatoes, and
some other fresh fruits and vegetables.
It is called the “Fugitive” vitamin be
cause it escapes fcom our food so
easily. So when you add ascorbic
acid to peaches and other fruits, you
put more food value into them. Os
course, you actually put it in peaches
to keep them from turning dark.
Some varieties of peaches darken
more readily than others. Buy your
ascorbic acid in powdered form (Vit.
€ tablets are all right—but expens
ive). You can buy pure ascorbic acid
or you can buy mixtures which con
tain ascorbic acid. These mixtures
are sold under various trade names.
Use them according to directions that
come with each one. Use 1 teaspoon
of pure ascorbic acid to 1 quart of
syrup for peaches. Don’t let powder
ed ascorbic acid mixtures stand after
preparing them. Use them immedi
ately.
Leaking containers is another prob
lem which sometimes arises. Some
sweetened fruit juices never do freeze.
They will seep out into the locker or
home freezer if given even a tiny
opening. Be sure that all containers
are closed tightly. Press lids down
firmly all around the top on rigid
containers. If heat sealing is used on
bags, be sure it works. Too much
heat will destroy the seal; too little
will not seal. An iron set on “rayon”
is satisfactory. Gooseneck twists on
polyethylene bags are all right if
they are made properly. Test bags
before using by filling with water.
Mend any leaking place by heat seal
ing that spot before filling.

Resident Os Merry Hill
Dies After Long Illness
Mrs. Claudie W. Williams, 72, died
Friday night at 9:30 o’clock at her
home near Merry Hill after a long
illness. Surviving are her husband,
H. H. Williams; two sons, W. H. Wil
liams of Rocky Mount and Clarence
Williams of Merry kill; one daughter,
Mrs. C. B. Holder of Rocky Mount;
two brothers, N. S. Askew of Merry
Hill and Edgar Askew of Ahoskie;
one sister, Mrs. J. 0. Todd of South
Norfolk. Three grandchildren and two
great grandchildren also survive.
A native of Bertie County, she was
a member of the Riverside Baptist
Church, where funeral services were
held Sunday afternoon at 3:30 o’clock
with the pastor, the Rev. R. L. Trex
ler, officiating. Burial was in the
church cemetery.
To feel oppressed by obligation is
only to prove that we are incapable
of a proper sentiment of gratitude.

The construction work will consist ■

chemical machine and equipment, I
miscellaneous piping, building and I
water retention basin, all axcava- I
tion and fill. I
Proposals must be sealed and mark- I
ed “Water Treatment Plant for the I
Town of Edenton, N. C.” All pro- I
posals must be submitted upon the I
blank forms provided in the copies of I
proposal, contract and specifications. j
Each bid must be accompanied by I
a certified check for five percent I
(5%) of the amount of bid made pay- I
able to the Town of Edenton, N. C. I
In lieu of the 5 % certified check, the I
bidder may offer a bidder’s bond in I
the amount of 5% of the bid. All I
checks to be drawn on a Bank or Trust I
Company insured by the Federal De- I
posit Insurance Corporation. I
Plans, copies of the Proposal, Con- I
tract and Specifications, etc., may be I
obtained upon application to the En- I
gineer. A set of plans and specifics- I
tions are on file at the Office of the I
Associated General Contractors, the I
Office of the Mayor, and the Office I

under “An Act to Regulate the Prac- I
tice of General Contracting”, ratified I
by the General Assembly of North I
Carolina on March 10, 1925, and so I
subsequently amended.
A performance bond is required in I
an amount equal to 100 percent of the I
contract price, conditioned upon the I
faithful performance of the contract I
and upon the payment in full of out- I
standing indebtedness in connection I
with the construction of the project. I
The Town of Edenton, N. C., re- I
serves the right to increase or di- I
minish the quantities given in the pro- I
posal and to award contracts which I
appear to be for the best interest of I
the Town. The Town also reserves I
the right to hold any and all proposals I
for a period not to exceed thirty (30) I
days from the date of opening there- I

reserves the right to reject any or all I
