IMOGENE COCHRANE Home Demonstration Agent I have found that freezing is one of the favorite methods of conserving fruits and vegetables used by many of you in the county. A number of you have asked for information re garding ascorbic acid. This is an anti browning agent used to prevent dark ening of apples, sweet cherries, light figs and peaches. Ascorbic acid is actually Vitamin C. As you know, that is a food element that we need every day. Our- bodies do not store it, so we have to have a new supply daily. We get it from oranges, can taloupe, green peppers, tomatoes, and some other fresh fruits and vegetables. It is called the “Fugitive” vitamin be cause it escapes fcom our food so easily. So when you add ascorbic acid to peaches and other fruits, you put more food value into them. Os course, you actually put it in peaches to keep them from turning dark. Some varieties of peaches darken more readily than others. Buy your ascorbic acid in powdered form (Vit. € tablets are all right—but expens ive). You can buy pure ascorbic acid or you can buy mixtures which con tain ascorbic acid. These mixtures are sold under various trade names. Use them according to directions that come with each one. Use 1 teaspoon of pure ascorbic acid to 1 quart of syrup for peaches. Don’t let powder ed ascorbic acid mixtures stand after preparing them. Use them immedi ately. Leaking containers is another prob lem which sometimes arises. Some sweetened fruit juices never do freeze. They will seep out into the locker or home freezer if given even a tiny opening. Be sure that all containers are closed tightly. Press lids down firmly all around the top on rigid containers. If heat sealing is used on bags, be sure it works. Too much heat will destroy the seal; too little will not seal. An iron set on “rayon” is satisfactory. Gooseneck twists on polyethylene bags are all right if they are made properly. Test bags before using by filling with water. Mend any leaking place by heat seal ing that spot before filling. Club Schedule Tuesday—July 28, at 8:00 O’clock, Rocky Hock Club, with Mrs. O. C. Long, Jr. Thursday—July 30 at 8:00 o’clock, Oak Grove Club, with Mrs. Hoskins Goodwin. Resident Os Merry Hill Dies After Long Illness Mrs. Claudie W. Williams, 72, died Friday night at 9:30 o’clock at her home near Merry Hill after a long illness. Surviving are her husband, H. H. Williams; two sons, W. H. Wil liams of Rocky Mount and Clarence Williams of Merry kill; one daughter, Mrs. C. B. Holder of Rocky Mount; two brothers, N. S. Askew of Merry Hill and Edgar Askew of Ahoskie; one sister, Mrs. J. 0. Todd of South Norfolk. Three grandchildren and two great grandchildren also survive. A native of Bertie County, she was a member of the Riverside Baptist Church, where funeral services were held Sunday afternoon at 3:30 o’clock with the pastor, the Rev. R. L. Trex ler, officiating. Burial was in the church cemetery.
