SECTION ONE—I News About Chibs In Chowan County By HATTIE SINGLETARY Home Demonstration Agent Chowan Home Demonstration Club members are “Learning to Live the Frozen Foods Way.”' Freezing is an easy and economical way to conserve food. It is the only way to keep fresh foods fresh. In fact, frozen foods are often fresher than the so called fresh foods on the market. Mrs. Charlie Peele, Miss Beulah Ev ans, and Mrs. Ellie Bunch of the Gum Pond Home Demonstration Club gave a radio program Tuesday, May 18th on “How to Freeze Vegetables.” They discussed varieties, picking, scalding, packing and freezing of the English pea. Other vegetables except those salad vegetables that you like to eat crisp, such as lettuce and celery, can be frozen successfully. If you expect a good product, the freezing must be done properly. Freez ing does not improve the flavor in most instances—it just keeps it. A skinny chicken will not come out plump, nor a tough pea tender. Freez ing bulletins are available on request at the Home Agent’s office. Home Beautification has been one of the outstanding projects in the Gum Pond Home Demonstration Club. It seems that almost all the homes and yards have been improved in the last few years. Outstanding improve ments have been made at the home of Mrs. Z. T. Evans, Edenton, Route 3. “Do you like Pop-Corn?” That’s the question Billy Goodwin, Chowan Senior 4-H Club member, asked the club members at the 4-H Club meet ings last week. Billy gave a demon stration on “How to Make a Pop Com Popper” to Chowan, Edenton and Rocky Hock 4-H Club members. Bil ly’s popper is inexpensive and easy to make. The only material necessary is a couple of coffee cans, bolts, wire, infra-red lamp and a pyrex bowl. It can also be used as a hot plate. It takes a lot of polish to get a demon stration ready for the district 4-H contest. That’s why Billy wants to give his demonstration several times before the District 4-H Elimination Contest which is July Bth. Accompanying Mrs. Joyner were three other state health workers. At the night session a film on tu berculosis was shown to a packed house.
