Negro 4-H District Federation Meets In Edenton On June 4tfi Ejhteen Counties Are Scheduled to Partici pate In Meeting On Friday, June 4 the annual Negro 4-H District Federation will be held in Edenton at the Edenton High School at 10:00 A. M. During the morning 4-H Club girls will compete in dairy foods and bread making demonstrations and will have a dress revue contest. 4-H Club boys will compete in team demonstrations and judging of poultry and swine. Tn the afternoon a program will be presented by 4-H Club members which will include a fashion parade of dress es in the dress revue contest Coun ties participating in the Federation are: Beaufort, Bertie, Chowan, Edge combe, Franklin, Gates, Green, Hali fax, Hertford, Martin, Nash, North- j ampton, Pasquotank, Perquimans, Wil son, Pitt, Vance and Warren. News About Clubs In Chowan County By HATTIE SINGLETARY Home Demonstration Agent New officers for 1955-56 were elect ed at the Chowan Home Demonstra tion County Council meeting Wednes day, May 26, in the Chowan Commun ity Building. The new officers are as follows: President, Mrs. Elbert Peele, Oak Grove Club; vice president, Mrs. * A. D. Ward, Jr., Ward Club; Secre tary and treasurer, Mrs. B. P. Monds, Center Hill Club. These officers will be installed at the September Coun ■ cil meeting. Mrs. Duke Cropsey, executive secre tary for the Pasquotank-Perquimans, Camden,Chowan Tuberculosis Associa tion, was guest speaker at the Coun j cil meeting. Mrs. Cropsey stressed the importance of detecting and check ing tuberculosis in the early stages. “Tqberculosis has no symptoms in the ea( ||stage,” she said, “That’s why it is that everyone be X rayed.” She urged the Home Demon stration Club women to encourage their families, friends and neighbors to visit the X-ray mobile which will be at the Edenton Police Station June 2 through July 8. and at Chowan School June 22-26. According to Mi's. Crop sey there are over 8,000 people in Chowan County who should take ad vantage of this X-ray mobile. Chowan Club women voted to spon -1 sos the mobile at Chowan June 22-26. Here are some delicious recipes for you to try during this “Milk Month.” Pineapple Baked Alaska "Glamour Dessert Easy to Make” 6 slices drained chilled pineapple from No. 2% can 3 egg whites, at room temperature 6 taMespons granulated sugar 1 to 1% pints vanilla ice cream Place drained chilled pineapple slic es on board. Beat egg whites with hand or electric beater until they stand in peaks when beater is raised Add sugar slowly while beating until stiff and glossy. Using an ice cream scoop or spoon, quickly place very firm ice cream in the center of each pineapple slice. Immediately cover completely with meringue out to edge of pineapple. Place board in very hot over at 475 degrees F., and bake for 4 to 5 minutes, or until a delicate brown. Take from oven immediate ly place on chilled serving dish or tray. Garnish with whole strawber ries and mint leaves. Serve at once. Serves 6. To va(y, just before bak ing, sprinkle cocoanut or toasted sliv ered almonds on the meringue. Asparagus With Almond Cheese Sauce 2 bunches asparagus (about 2 lbs.) 3 tablespoons butter 3 tablespoons flour % teaspoon salt '* teaspoon pepper I I*2 cups milk THE CHOWAN HERALD, KDgNTON. N. C.. JUNE 3, 1954. 1 cup grated American Cheese Vt cup toasted almonds Cook asparagus in 1 inch of boiling, salted water in tightly covered sauce- ! pan,, about 20 minutes or until stalks are tender, using % teaspoon salt to 1 1 cup water. Remove; drain and keep hot. To make sauce, melt butter in a saucepan, add flour and seasonings ( and blend. Gradually add milk while stirring; cook until smooth and thick ened over low heat, stirring constant ly. Fold in cheese, stirring to blend. Add chopped or slivered almonds to sauce, saving a few to garnish top. Serve over asparagus tips. Serves 6. Strawberry Chiffon Pie Va pint ripe strawberries Va package strawberry flavored gel atin (3% tablespoons) Vt. cup sugar Va cup boiling water 1 cup evaporated milk, chilled icy cold 2 tablespoons lemon juice 1 8-inch baked pastry shell Wash strawberries. Save out 6 choice berries for garnish. Cap and slice remaining strawberries. There should be about % cup sliced berries. Place gelatin in medium size mixing bowl. Blend in sugar. Edenton Furniture Co* egg white, stirring occasionally. Whip chilled milk until it is stiff and holds peak. Add lemon juice and whip just to blend. Fold quickly but thorough ly into gelatin mixture together with sliced strawberries. Turn into baked pastry shell. Garnish with the six 1 whole berries. Chill until set, about 2 to 3 hours before serving. Makes 1 8-inch pie (6 servings). Sunshine Pudding With Fruit 2 cups milk Vi cup cornstarch 2/3 cup sugar % teaspoon salt 1/3 cup lemon juice 1 teaspoon grated lemon rind 2 tableypoons butter 2 eggs, separated Heat milk in double boiler to scald ing point. Blend cornstarch, Vi cup of the sugar and salt. Pour a little i hot milk on dry ingredients while stir ring; add remaining hot milk, stirring to blend. Return to double boiler and cook 20 minutes over hot water, stir ring occasionally. Beat egg yolks, pour a little hot mixture onto yolks; return to double boiler and cook 2 minutes longer. Remove from heat, add lemon juice, and rind, butter, beat ing until smooth. Cool. Beat egg whites until frothy, add remaining Vi cup of sugar, a tablespoon at a time, beating between each additin. Beat until stiff and fold into pudding., Pour into custard cups or pudding molds that have been rinsed in cold water. Chill. Serve in pudding dish es with sliced fruit. The Jersey Cow Combine Vi cup maple syrup with a scoop of vanilla or maple ice cream. Mix well, adding gradually 1 cup cold milk. Top with ice cream or whip ped cream. Makes 1 tall glass. PEANUT DEMONSTRATION A peanut variety demonstration has been planted with A. D. Ward, Hobbs ville community. Four rows of each of the following new varieties were planted: N. C. 1, N. C. 2, and c-42. These new varieties show great prom ise for peanut growers as the yields in all tests made have consistently been higher than the old varieties.
