Chowan County Agent ' Results Os Spoiled Meat Sur vey: There were several fac tors contributing to the spoil age of cured home meat sup plies this year, according to Dr. John A. Christian, Meats Spe cialist of the N. C. Agricultural Extension Service. Most of these factors could have been controlled had the owner been aware and known how. Failure to completely get the animal heat out of hams and shoulders before salting down was perhaps the main cause of spoilage. These cuts should be laid out separately and allowed to chill at a temperature of not ever 40 degrees for at least 18 hours. A little salt might be sprinkled over each piece at the time. Meat that is frozen will not take salt until it thaws. If meat freezes, it should remain in cure the regular period plus the num ber of days it was frozen. Another factor was submitting meat to higher temperatures immediately after cure. For ex ample, a lot of meat may need six weeks or 42 days in cure. At the end of the cure it takes another 30 days for the salt to penetrate the entire cut and equalize. Suppose that within two or three days after coming out of cure the meat is smoked at a temperature above 50 de grees, may even be as high as 1 80 degrees, bacteria in* the un salted area around the bone or between the bone and skin side begin to work, causing a souring condition. When salt penetrates this area it stops the action of the bacteria, but damage has al ready been done and will re main. • Improper bleeding of the ani mal at killing time can result in blood pocketing around the bone resulting in poor curing and off-flavor in the bone area. Skippers and other insects may attack meat as the weath er begins to get warmer. We found that the local curing plants regularly spray their cur ing rooms and smoking roams but if the meat is taken heme and hung in % smokehouse wm h has not been thoroughly clean ed and sprayed against ins cri. By applying the following suggestions a family should be able to cure good meat that will keep: (1) Use thrifty, meat type hogs; (2) Plan farrowing and feeding so that hogs will weigh 210 to 240 pounds ready for butchering December 15 to i January 31, preferably by Jan uary 15; (3) Kill hogs when temperature is below 40 degrees or use curing plant facilities; (4) Be sure hogs bleed out well; (5) Allow carcasses to hang overnight and cut out next day; (6) When meat is cut out, lay hams and shoulders out sepa rately with a little salt sprinkled over the flesh side, for 18 to 24 hours: (7) Apply eight pounds of salt per 100 pounds of meat. If salt appears to harden on sur face, immediately tear up and repack with cure; (8) Thorough ly clean and disinfect smoke house before using for new meat. (9) Follow a curing schedule: j hams and shoulders weighing 1 15 pounds should stay in cure! 30 days; 20 pounds, 35 days; 25 pounds, 40 days; larger, 1% days , per pound of weight. Sides 1 should remain in cure only 10 Ito 15 days, depending on the size. (10) When meat comes out of cure, brush or wash off excess i salt and keep it at a tempera ture of below 45 degrees for the next 20 to 30 days. (11) Smoke for desired appearance but don’t heat the meat during the smoking process. (12) As soon as meat is smoked, wrap ; each piece in kraft paper, place in a clean bag and hang for aging. Sides and shoulders should be used first before they become strong-flavored.
