This column is slow get ting started and slower to finish. Perhaps I should have finished first. I am now recuperating and try ing to “take it slow,” which is quite a chore for me as I like to be “up and at ’em.” However, I’ve found my limitations, as to ex ertion. I received so many nice cards, notes and let ters from my friends, which surely helped me pull through this period of illness. The nurses and doctors of the Albemarle Hospital were, as usual, so very kind, but, oh! how I wish ed I could be in Chowan County! I noticed, on my way to the Medical Cen ter this week that our own hospital is growing by leaps and bounds and it al ready looks elegant. Some day, in the near future, the dreams of a new and better hospital will come true. However, our own hospital which we have now is a good place to be when ill, and each person there does their very best for a good recovery. Here’s a recipe 3ent to me by Mrs. Thelma Miley of Charleston, S. C. A former resident of Chowan County,Mrs. Miley kindly answered my request of last week for a straw berry cake. It sounds de licious and since I’m par ticularly fond of straw berries, I expect to make this cake soon. Thanks, Mrs. Miley. Fresh Strawberry Cake 1 pkg. Betty Crocker white cake mix. 1 pkg. strawberry jello. 2 tbsp. flour. % box fresh or frozen strawberries, mashed. Vi cufi oil. Vi cup water. Mix well all ingredients, adding the strawberries last. Bake in two 9-inch layer pans at 350 degrees until spring back. Icing V* cube butter. Vi box of strawberries, mashed. 1 box powdered sugar. Cream together and ice cake when cool. Serves 12 to 14. Fill greased muffin cups two thirds full. Bake at 425 de grees for 20 to 25 minutes, or until golden brown. Cool slightly before removing from the pan. Makes 12 medium muffins. Quickies Oriental Butterfly Muf fins: For extra flavor and a decorative touch, mix in one tablespoon grated or ange rind to your basic muffin batter. Fill greas ed muffin cups and place two mandarin orange sec tions on each muffin in opposite directions, forming ‘butterfly. Bake. Savory Biscuit Pin wheels: Make tasty appe tizers by separating bis cuits a package of re frigerator biscuit dough. Roll out each to a rec tangle. Cover with one teaspoon each catsup and grated Parmesan cheese. Sprinkle with oregano or caraway seeds; top with chopped mushrooms. Start ing at the short end, roll up in jelly-roll fashion. Cut into one-inch slices. Place pinwheels on un greased baking sheet and bake at 400 degrees for nine to 11 minutes or un til brown. Makes about 40 appetizers. Tart 'N Tangy —Add one tablespoon each of freshly grated lemon rind and poppy-seed to muffin bat ter. Bake as usual. Miss Peele is the daugh ter of Mr. and Mrs. Hen derson Ray Peele, Route 1, Tyner. Purpose of the recep tion was to acknowledge outstanding scholarship by the students and to give them an opportunity to talk informally with vari ous faculty members about areas of study in which they have an interest.
